I can't seem to find a simple recipe for wild rice that is a dessert?!
Answers: I have heard you use cocoanut milk and that is what I would like.
The Best Wild Rice Pudding
2/3 cup wild rice
2 cups coconut milk
2 cups heavy cream
6 tablespoons granulated sugar
6 tablespoons butter
grated rind of 2 lemons
cinnamon, optional
Preheat oven to 250F (120C).
Mix the rice, cream, coconut milk, sugar, butter and lemon rind together in a bowl and pour the mixture into a greased 2 quart baking dish. Bake for 2 hours, stirring occasionally.
Sprinkle with cinnamon and serve hot or cold

Blueberry Wild Rice Dessert
2 cups fresh or frozen blueberries
3/4 cup water
1/4 teaspoon salt
3/4 cup sugar
2 teaspoons cornstarch
1/4 cup water
1 tablespoon lemon juice
3 to 4 cups cooked wild rice (2/3 to 1 cup, uncooked)
Combine the blueberries, water and salt. Mix sugar and cornstarch and dissolve this in the 1/4 cup water. Stir this into blueberries and cook, over medium heat, until thickened and clear. Stir in the lemon juice and then the cooked wild rice. Serve slightly warm or chilled, with whipped topping or vanilla yogurt as a topping.

GLORIFIED WILD RICE
1 cup cooked wild rice
1 cup cooked white rice
2 cups drained crushed pineapple
1/4 cup maraschino cherries
1 cup whipping cream, whipped with 1/4 cup sugar and 1 tsp. vanilla
Mix together all ingredients except prepared cream and chill. Fold prepared cream into rice mixture. 10 servings
WILD RICE PUDDING
2 cups cooked wild rice 2 eggs
1/2 cup brown sugar 1/2 tsp salt
2 1/2 cups milk 1/4 cup butter, melted
1 1/2 Tbsp cornstarch 1 tsp cinnamon
Beat eggs and salt. Add brown sugar and cinnamon to which the corn starch has been added. Add butter and milk. Stir in wild rice. Bake in casserole placed in pan of hot water put in the middle of oven. Bake at 350 degrees for 50-60 minutes, stirring occasionally.
Serve warm with whipped cream, if desired.
simple rice dessert with coconut( for 6 people)
->2 cups of wild rice/ back rice, soak wild rice/ black rice (overnite), throw away the water before cooking it
-> 2.5 cup sugar
-> screw pine leaves (4 leafs , twist into a bundle)
-> 6 cups of water
boil: everything (not including the sugar) until rice cooks and water has thicken ( turn down the fire or else the rice would burn), remember to stir it while you are cooking , add sugar to taste.
the topping :
1 can coconut milk (thick)
1 teaspoon salt
place the coconut milk in a pot.. and add 1 teaspoon of salt( the coconut should taste salty, )
TO serve:
pour coconut milk over the black/wild rice pudding...
