Answers: I plan on having a a Mexican rice and 7 Layer Dip......

Tacos WITH a 7 layer dip and rice?? That's enough, all you need are the drinks (and I'm talking booze, here sis!!!)

A cold Tecate/Corona/Bohemia beer with lime (and a drop or two of Texas Pete)

Margaritas with salted rims.......and made with good Tequila and Grand Marnier......

Can you say S-A-N-G-R-I-A??? And so easy to make, and you DON'T need the best wine in the wine barn.......Slice up some lemons, limes and oranges and toss them in with a couple bottles of wine and a cup of 7-up let sit.....DON'T ice down, ice each individual glass......

You're set to say FIESTA!!!!! Enjoy!!

Refried Beans

a nice corona with a lime in it.

Rice and beans, Corn, stuffed jalapenos (or milder peppers)

margaritas

refried beans & cornbread

Spanish rice; black or refried beans; sliced oranges

A guacamole salad. It is a healthy and tangy side dish...Its bright, colorful, full of flavor and is easy to make and modify to your tastes! Thanks to Food Network!

That's already a lot of food. You could throw together a green salad, though.

I like Black Bean Soup with my tacos. Put a little velveeta cheese, sour cream, and rotel in two cans of black beans and let it simmer - its sooooo good.

Little Mini Chicken Quesadillas (:!
And Red Beans.
And also some Spanish Rice. (:

guacomole or is that part of the 7 layer dip? Nachos or tortilla chips with salsa? Garden salad?

Spanish/Mexican rice (SOOO easy to make)
Guacamole
Enchiladas (homemade)
Shrimp burritos or quesadillas
Side salad

EDIT: Chicken Tortilla Soup!!! Shredded cheese on top with fried totilla strips! YUM!

a plain salad as a balance against the spiciness

You could make a fruite salsa as a dessert with pita bread chips with cinnamon on them.

sounds like you have it covered, but everything else that goes is as follows:

refried beans (you can dress up with some cheese and green chili's or green onions)
tex-mex corn (aka santa fe corn, mexican corn, etc.)
jalapeno corn bread
salsa
chili con queso
nachos
grill poblano peppers
pico de guyo (sound it out, I have no idea how to spell it)
taco fixen tray - shredded cheese, chopped tomatos, shredded lettuce, chopped jalapenos, chopped black olives, fresh cilantro, sour cream
guacamole

Sonds good as it already is...just add some refreshing drinks. Good Eats!!

Tacos!! Well, chili or corn.

A cooling shredded iceberg lettuce salad with black beans, chopped tomatoes, red onion, cliantro, and a simple wine vinegar and garlic vinaigrette.

I would say: Flan for dessert! Maybe with some fresh strawberries!

Flan is not difficult to make.

Have fun at the dinner party!
