You can cook about anything in a microwave. Invest in a microwave cookbook. Years ago I used to work pretty late and when I got home did not have a lot of time to cook for my son and myself. I did it all in the microwave. An example. You can make rice in a microwave, it doesn't take long. I put the rice in a casserole dish, put a couple of pork chops on top then poured on a can of cream of mushroom soup and cooked it for a few minutes till the pork was done. A salad topped it off.

Buy the ziploc steam bags. You can cook anything in those suckers ( Im not sure how well it tastes, but it works)
You can steam veggies, and chicken, add spices and also make rice, pasta, etc, in the microwave. Nothing will taste gourment - but you arent limited to frozen dinners with the microwave.
Lots of soup and sandwhiches.
There really isnt anything you CANT cook in a microwave - you'll have to probably play around a bit to find the things that really shouldn't be cooked in the microwave.
I just saw a contraption for the microwave the other day. It's like those george foreman grills except in the microwave - that might be an option.
Ziplock makes these new bags that you can steam your food in IN the microwave!! You can steam fish by adding some herbs to it. Just place it in the ziplock bag add the herbs and you have yourself a good healthy dish. You can also do veggies that way too. Yams can be cooked in the microwave too. There are alot of things you can cook in a microwave and still eat healthy.
Check out a microwave cooking book at the library. You'd be surprised what you can do with it.
you can buy special bags to use for steaming. for instance, vegetables
try and eat 5 portions of fruit and veg a day if you find it hard to stick to look online for strict diet help.
go for vegtables and stay away from ready/frozen dinners.

i have a microwave steamer mine is from tupperware but they may be available elsewhere. you can steam fish, veg, meat,rice whatever in it. it came with a great recipe idea book and was well worth the money.
Did you already buy the microwave? The reason why I ask, they sell "convection microwaves" which have both heating elements (microwave and convection oven). You only use one or the other. It's really good for baking pizzas. And the convection part is basically like an oven, so anything you can cook in an oven, you can cook in a convection microwave as long as it fits. And you can put metal in it, as long as it's on convection. Whew! Hope that was useful.

The other thing I was going to suggest is to buy some kind of cookbook on microwave-cooking. That should broaden your horizons. Also, microwaves are perfect for steaming vegetables.

Get a crockpot too. It won't take up much room but it will give you a ton more options...
