Any one know any good recipes that include bay scallops?!


Question: My husbands aunt slices them in half, places them in a single layer in a casserole dish or 9 x 13 inch glass baking pan, smashes up Ritz crackers and layers that over the scallops then covers the whole thing with melted butter or margarine, then bakes At 350 degrees 20 - 30 minutes. My husband thinks these are the best ever!

Bay scallops with scallions recipe

Recipe ingredients:

* 4 tablespoons butter
* 1 1/2 pounds bay scallops
* Black pepper, to taste
* 1 small bunch scallions, sliced
* 1/3 cup dry white wine
* 3 tablespoons fresh parsley, minced
* Lemon wedges


Recipe method:

* In a large, heavy skillet heat butter and saute scallops seasoned with pepper very quickly until slightly browned, about 4 minutes.
* Remove scallops with a slotted spoon and put on a warmed serving dish.
* Saute the scallions in the same skillet over medium-high heat for 5 minutes. Do not brown.
* Add wine to de-glaze the pan over high heat and cook until wine is reduced by half.
* Pour sauce over scallops. Sprinkle with parsley and serve with lemon wedges to squeeze over scallops.
* Serve with additional hot butter if desired.

This chowder is amazing! It's what I'm fixing for dinner tomorrow!

Old English Scallop Chowder
4 bacon slices, chopped
1/2 onion minced
3 celery stalks, diced
2 carrots, diced
1 green pepper, diced
4 C. clam juice
3T. fresh thyme, chopped
2 cloves garlic, minced
1 bay leaf
1/4C. butter, room temperature
1/4C. flour
1 large potato, peeled, diced
1# bay scallops
pinch cayenne pepper

saute' bacon until beginning to brown, add onion, saute' until golden. Add remaining veg. until beginning to soften. Add clam juice, thyme, garlic and bay leaf, bring to simmer. Mix butter and flour to smooth paste, whisk into chowder by tablespoonful and simmer til thickened, stirring constantly. Add potato, simmer until tender. Add scallops and simmer until just cooked through. Season with cayenne, salt and pepper.

This is sooo easy and only takes about a half hour to make!
