i asked that question today and this was the best answer.
it's simple, quick and so yum. i don't know how i haven't heard of cooking grilled cheese sandwich like that!

Grillled cheese:

Take a frying pan - put butter on it
Take 2 slices of bread and spread a little mayo on the inside of each slice
Lay bread in pan
Put a slice of cheese on each piece of bread
Cut a tomato (if you wish) and lay tomato slices on a piece of bread (or you can add bacon or ham).
When cheese looks melted, stick two slices of bread together and remove from pan

order a pizza.... I am in love with mushroom, bacon, extra cheese and roma tomato pizzas!!! spoil yourself, you are worth it

I like to have a vegetable bullion cube boiled into water with tofu strips, vegetables, and top ramen noodles (no seasoning packet). Then I like to add in Bragg's amino acids and other seasonings. Its a good, fast, low-fat, quick soup.
Or make a quiche from scratch!

AAAhhh, Spring is in the air so I would go with a fresh bowl of salad greens, tossed lightly with a Balsamic Vinaigrette topped with Roma Tomatoes, Spanish Onions, Sauteed Mushrooms and Asiago Cheese. Followed by a simple Pannini, filled with Cappicola, Shaved Parmesan, Roasted Red Peppers, Garlic and Fresh Basil........... since you're stuck at home for the day, you might as well pull out all the stops and go for that slice of left over pie in the frig,(whatever flavor). slightly warmed with a scoop of vanilla bean ice cream on top. What a wonderful day being stuck at home with this lunch!

Pan-roasted sea bass with a warm salad
Ingredients
? 1 fillet of sea bass per person
? 4-5 cooked artichoke hearts per person (good quality jarred artichokes are readily available)
? 2 Lemons
? 4-5 tbsp Olive oil
? A handful of rocket per person, rinsed
Method
Preheat oven to 180C and season the sea bass with rock salt and freshly ground black pepper. Heat a frying pan until it is piping hot then add a tablespoon of olive oil.
Place the fillets of fish in the sizzling oil, skin side down for approximately five minutes until the skin becomes nice and crisp. Then flip the fillets over and cook for just 30 seconds. Remove the fish, place it on to a greased baking tray and place the tray in the preheated oven and roast for about three to four minutes. While the sea bass is roasting, place the artichoke hearts in a hot pan with a drizzle of oil to warm through.
Remove the sea bass from the oven and check that the flesh is white all the way through to ensure it is cooked. Squeeze a 1/4 of a lemon over the top of each fillet. Place the roasted sea bass crispy skin side up on a bed of rinsed rocket on a plate.
Arrange the warm artichoke hearts around the sea bass. Whisk together some olive oil and the juice of the remaining lemons, season to taste and drizzle over the warm salad.

Classic :

Grilled Cheese Sandwich, and a bowl of Tomato Soup

Take some crusty white bread- make sure you either get one BIG roll or two BIG thick slices of bread. Layer it up with butter, deli meats (whatever you have), sauteed mushrooms with onions or garlic, cheese, red or green pepper antipasti (preserved in olive oil and herbs) and some fresh chopped oregano and parsley over the cheese. Make sure cheese is on both sides of the bread so it melts and sticks the sango together. Close the sandwich and turn on your griddle or frying pan. Put butter in the pan and press the sandwich down. When its crusty and brown, put more butter in and flip the sandwich over. Serve cut in half with potato chips, pickle spears and a cup of onion soup for dipping!

This lunch was very easy, quick to make and DELICIOUS ;)

SICILIAN PASTA PESTO SALAD

2 lbs. ziti, penne, or other pasta, cooked

Pesto Sauce:

2 cups fresh basil leaves, chopped
1/2 cup walnut or pine nuts (optional)
4-6 large cloves garlic, minced or pressed
1 cup olive oil
1 1/2 cups grated Parmesan cheese
3-4 anchovies, blended (optional)
1/4 teaspoon crushed red pepper flakes
dash of black pepper
salt to taste

Place the olive oil into a small saucepan add the garlic, red pepper, grated imported Parmesan cheese and herbs and spices. Crush the anchovies into the oil until blended. Bring to a simmer for 1 minute and immediately remove from heat.
Pour this mixture over cooked hot pasta, stir well, and serve with bruschetta.
