Homemade Veggie Soup Like Progresso?!
Answers: I love the progresso vegetable soup. But I cannot figure out how to make it homemade or similar to it. Anyone have a recipe that is very similar to the progresso one that contains corn potato, green beans and NO BEEF!!!
Soup is one of the simplest things to make, and what I like, is that I can add whatever I want, or omit what my family doesn't like. Progresso has several versions of vegetable soup. I currently have 3 cans, and they're all different. So here's what you do..read the label on the can, to get an idea of what kind of stock they may use. It could be chicken or vegetable stock.
Then start by sauteing some onion, carrots, and celery in a large pot. Add your broth(vegetable, or chicken). Bring up to a simmer, and the add 1 can of tomato sauce(small 14 oz can). Add your green beans, diced potatoes, and simmer. When the potatoes are cooked, add some frozen corn. You can add as much or as little as you want of each ingredient. Get creative. Add some herbs like parsley and thyme. Or you may like fresh basil and rosemary. Seaon with salt and pepper and you have your own version of their version. (and it's not homestyle..it's home made..so much better for you!)
Here is one if you don't like crab, just omit it.

Corn and Crab Chowder

1 tablespoon vegetable oil or extra-virgin olive oil, 1 turn of the pan in a slow stream
2 tablespoons butter
2 all-purpose potatoes, peeled and diced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 small red bell pepper, seeded and diced
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tablespoon Old Bay seasoning blend, found near seafood department or, on spice aisle in your market
3 tablespoons all-purpose flour
2 cups vegetable or chicken stock or broth
1 quart whole milk
3 cups corn kernels, scraped fresh from the cob or, frozen kernels
8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters
4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional
Toppings:
Oyster crackers
Hot cayenne pepper sauce
Sliced scallions
Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then sprinkle in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions.

soup is very easy to make and can be made in 1/2 an hour or so.
Fist pick out what ever vegtables you want to use
I usually use onion, celery, carrots, garlic sometimes cabbage.
heat a small amount of oil in the bottom of your pot on med heat.
cut up all your veggies is small peices, try your best to make them all about the same size so they take the same amount of time to cook (if you have a vadalia chop this works great, you know as seen on tv) season with s&p
place all your veggies in bottom of pot and cook for a few minutes to soften them. then add your broth, I usually use chicken put you can use vegtable or beef, anyone works. I also like to add a small can of tomatoe sauce because I like my broth to be redish in color. Seaon again with s&p some parsley really whatever seasoning you like. Let simmer for 20-30 mins.
If you are not using potatoe as your starch you can use any pasta, rice, egg noodle or barley and cook it right in the pot with the broth, (but don't let simmer for 20-30 minutes first, just bring to boil and add)my only suggestion is if you are using a rice or barley is to make sure you have more than enough broth to cook it in, or you can cook it seperatly and add it into the soup at the end, put I'm a one pot kind of girl.
at the very end if you would like to add some left over chicken or any meat you have that's fine, also if you plan on adding any vegtable in a can or that is frozen, you do that at the last five minutes also
