Oh, "poke" cake... I've made that a long time ago.
Hmm. I would follow the angel food cake directions for cupcakes.
Then if you have time, only make one "poke" cupcake first and see if it's a mess or not.
I'm really not sure if it will work well or not with angel food cake.
A thought: I wouldn't go too crazy with the holes on the cupcakes. You don't want them all jello.
just make the cake batter put it in cupcake papers instead, cook them, poke holes in them, then just put the jello stuff in the holes and chill =) ta-da
Angel food cake usually won't work for cupcakes, since the pan is really important to make the cake rise properly. If you want to give it a shot anyway, bake and cool the cupcakes but leave them in the pan. Follow the rest of the directions and treat them as a whole bunch of little cakes since that is the only difference.
