How to Flambe' with Dark Rum...?!


Question: Whenever I use Meyers Dark to flambe' a dish it never flames up high. I just get really low flames that are barely visible and don't seem to burn the rum off much. I normally just drizzle it over the pan. Do I need to heat the rum in the pan for a minute or two before lighting it, do I need to use more, or what?

It isn't burning high because it doesn't have that much in it. Yeah, there is a significant alcohol level, or else it wouldn't flame at all, but if you are wanting big showy flames you need to use over-proof rum, like Bacardi 151.

go for a rum with a higher alcohol content

Various alcohol will ignite at certain levels of heat. The lower the content the smaller the flame. One way to get better results is to make sure the alcohol you are using is more than just warm. Pour the rum into the hot pan off heat so that you don't get a blowup. After a few seconds tilt the pan just enough to let the flame start the alcohol. If you are not sure about that just get it good and not and touch it of with a match or butane stick lighter.
