Breadmaking......?!


Question: I`ve just got into making my own bread....using a bread machine....i`ve done most of the recipes in booket that was given with it....now i would to make the bread more healthy...by adding different seeds...nuts what would you suggest...i can use to increase the health benefits...i manely use wholemeal flour....and try to up the fibre using branflakes....i want try to boost this also with seeds

Raisin Bread - serves 24

2 cups milk
25 ounce active dry yeast
1/4 cup warm water 110F
2 tbsp white sugar
1 1/2 tbsp shortening
2 1/2 tsp salt
6 cups all-purpose flour
2 cups raisins

Scald milk. Soften yeast in warm water; let stand 5 minutes. Pour scalded milk over sugar, shortening, and salt in a bowl. When lukewarm, blend in raisins and 1 cup flour.
Stir in yeast and beat well. Add 3 cups flour, continue beating until smooth. Beat in enough remaining flour to make a soft dough. Turn on lightly floured surface; let rest about 5 minutes.
Knead until smooth and elastic. Place dough in a greased bowl; turn to bring greased surface to top. Cover, let stand in warm place until dough is doubled, about 1 hour.
Punch down, cover, and let rise again until almost doubled in bulk.
Turn on lightly floured surface. Divide dough in half; let rest 5 to 10 minutes.
Shape into loaves. Place in 2 greased loaf pans 9 1/2 x 5 1/4 x 2 3/4 inches. Cover and let rise until doubled, about 1 hour.
Bake in a 400 degree F (205 degrees C) oven for about 50 minutes.

Try sunflower seeds and pumpkin seeds in the dough - you can sprinkle them on top once the dough is mixed too. Also poppy seeds are nice on bread.

I have tried adding some more sugar and some currants. It is brilliant toasted with butter.

Ooh I found myself in the same situation. I started off with the base recipe in the book for honey whole wheat bread, and made some changes to make it more healthy:

-2 Tb of extra virgin olive oil instead of 2 Tb butter
Added the following:
-1/2 cup of whole grain mix (it's like a 5 grain mix for hot cereal)
-1/4 cup flax seeds
-1/4 cup sesame seeds

The sesame seeds add lots of fiber and iron, the flaxseeds fiber and omega 3's, and the whole grains add all of the above. I just add like an extra ounce of water, some more yeast, and it comes out great! It loads the bread with fiber, protein and beneficial fats!
