DRIED APRICOT - PISTACHIO BISCOTTI

1/2 c. whole wheat flour
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
5 tbsp. cold unsalted butter, cut into pieces
3/4 tsp. vanilla
2 eggs, beaten
2/3 c. roughly chopped dried apricot halves
1 c. shelled natural pistachios
1 tsp. granulated sugar

Preheat oven to 350 degrees. Lightly butter a large baking sheet. In food processor, combine first 5 ingredients. Pulse to blend. Add butter and vanilla; pulse until mixture resembles coarse meal. Add eggs and pulse 3 times to blend. Add apricots and pistachios; pulse just until mixture is evenly moistened.
Transfer mixture to large bowl; with hands form into dough. Divide dough in half. On lightly greased baking sheet, shape dough into 2 (12 inch) logs. With hands flatten each log to a width of 2 inches. Sprinkle each with remaining sugar. Bake 25 minutes or until golden brown.

Remove logs to cooling rack for 10 minutes. With a serrated knife, carefully cut logs on the diagonal into 1/2 inch slices. Place on baking sheet cut side up; return to oven and bake 7 minutes or until very lightly browned. Transfer to rack; cool completely.

Makes 2 dozen biscotti.

OR

ALMOND - ORANGE BISCOTTI

Vegetable shortening and flour (for baking sheet)
2 1/4 c. all-purpose flour
1 1/4 c. sugar
1/4 tsp. baking powder
Pinch of salt
3 eggs, lightly beaten
1 tbsp. vegetable oil
1/4 tsp. almond extract
Finely grated zest of 1 orange
1/2 c. coarsely chopped almonds

Preheat oven to 350 degrees. Grease and flour a baking sheet. Shake off excess. In a large bowl, sift flour, sugar, baking powder, and salt together. Make a well in center of the mixture. To the well, add remaining ingredients. With your hands, work dry mixture with liquids until a dough has been formed. Divide the dough in half. On a lightly floured surface, shape dough into 2 flat bottomed cylinders, 1 inch high, 2 1/2 inches wide, and 8 inches long. Remove each to the baking sheet.
Bake for 30 to 35 minutes until lightly colored on top. Remove from oven and cool slightly. Holding a long sharp knife by the handle and tip, cut cylinders diagonally into 3/4 inch slices. Carefully place slices back on baking sheet; cut sides down. Return them to the oven for 15 minutes more and bake until sides are golden and biscotti have dried a bit. Remove from oven and cook on wire racks. The biscotti should be somewhat hard and crunchy. Makes 20 to 24 biscotti.

OR

CHOCOLATE BISCOTTI

1 1/2 c. flour
1/2 c. Nestle Cocoa
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2/3 c. sugar
3 tbsp. butter, softened
2 eggs
1/2 tsp. almond extract
1/2 c. almonds, coarsely chopped

Preheat oven to 350 degrees F.
Combine cocoa, flour, baking powder and baking soda; set aside.

In large mixer bowl, beat sugar, butter, eggs and extract until creamy. Gradually beat in flour mixture; stir in almonds.

Divide dough in half. Shape into two 12 inch long rolls; flatten slightly. Place in greased 15 1/2 x 10 1/2 inch baking pan.

Bake 25 minutes. Cool on wire rack 5 minutes. Cut in 1/2 inch thick slices; return to baking pan, cut sides down. Bake 20 minutes longer. Cool completely on rack. Yield: 48 cookies.

This is just so easy, that you'll be making them all the time! Just change out the flavor of the cake mix, and add whatever kind of nuts, mini chips, raisins, etc. you want....Or you can drizzle melted chocolate on the ends too...

CHOCOLATE MACADAMIA BISCOTTI
parchment paper to put on cookie sheet
1 pkg. devil's food cake mix
8 Tb. (1 stick) melted butter
2 large eggs
1 c. flour
1/2 c. chopped macadamia nuts
Preheat oven to 350 and line a baking sheet with parchment paper (or spray)...
Mix all ingredients together with electric mixer (low) for 3-4 min, or until well blended. Scrape down the sides. The dough should form a ball (or do a few seconds more until it does). With floured hands, shape the dough into long rolls, about 12" long x 4" wide x 1/2" thick (I pound it flatter with the side of my hand or my fingers). ... Bake about 30-35 min. Remove baking sheet and immediately slice the rectangle (s) into 1" wide slices. Carefully, flip the slices onto their sides and return to the oven for another 10 min. Take pan out and cool.....

1 tablespoon anise extract, or 3 drops anise oil
3 1/4 cups all-purpose flour
1 tablespoon baking powder

Preheat the oven to 375 degrees F. Grease cookie sheets or line with parchment paper. In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into 2 pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2-inch thickness.
Bake for 25 to 30 minutes, until golden brown. Remove from the baking sheet to cool on a wire rack. When the cookies are cool enough to handle, slice each 1 crosswise into 1/2-inch slices. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Cookie slices should be lightly toasted.
