Do I have to refrigerate sesame tahini after opening?!

Yes! Yes! Yes! If that stuff goes bad and you and you eat it, it will give you food poisoning or at the least make you sick.

If it is "raw" tahini I would suggest keeping it cold.

If not, leave it out. It will be fine.

I once read that you are to keep it airtight in the fridge, upside down (I think this may have to due to all the oil in tahini). However, I just keep it in the fridge right side up and seems to keep fine, as long as you mix it extremely well before using.

Like the first and last person said it should be keep in the frig as it separates and the oil can go rancid if not watched.

yes... it's very polyunsaturated and can go rancid easily. refrigeration prolongs shelf life.
