You need dashi, vegetable, and the miso.
Dashi is made from konbu + fish flakes, but the instant powered dashi works well. I suggest the instant type.

Boil water for 2 people. Put a spoonful of dashi in. Add your vegetables - carrots, daikon, lotus root, burdock, or bamboo are just a few ideas.
Let the veggies become soft, adding more water if too much boils away. Turn off the heat and cover to keep the heat in.

Now you are ready to add the miso. The darker the miso, the stronger the flavor. Before you add it, you must break it down. So put a few large spoonfuls of the miso in a small bowl. Add a spoonful of hot water from the soup. Work it in and mix completely. Keep adding hot water and mixing it in, until the miso is broken up enough that it will disperse evenly in the soup. The darker the miso, the harder it is to break it up.

Pour some of the broken down miso in the soup and taste it. If you want it stronger, add more. There are no exact proportions with miso; it is one of those foods that everyone makes their own way.

For the best taste, add the miso just before serving. Never add the miso and continue to boil. Boiling will ruin the miso.

If you use delicate add-ins like seaweed or tofu, add near the end of boiling so you dont over-cook them.

Miso soup is pretty easy. Go to Whole Foods Grocery store (which I think is pretty much all over the place now), or another health food store in your area and you'll find it usually in the dairy section. Miso soup is just spoons of miso, added to steaming hot water, scallions and some seaweed broken up into the bowl and stir. You can also find little packets of the powdered version (just add hot water)...also sold at health food stores.

It is made from a base stock known as dashi, that can be found in powder form from Japanese and Asian stores or a bit of chicken broth with soya sauce is fine, for miso soup you must heat everrything first as miso cannot be boiled, you have to add the miso paste in a strainer to keep lumps from forming.

Then put it in bowls and add some green onions for garnish, I like to use the white miso and sometimes the red, just make sure to leave the seasoning until the end, as miso can be salty so make sure it is not boiled and then make adjustments at the end.

Firstly you able to buy the miso in whole sale store in japanese food section, or you might go in organic shop they usually selling a miso in can.And at the same place you can get dashi also.

INGREDIENTS:

* 3 cups dashi soup stock
* 1 block tofu
* 3-4 tbsps miso paste
* 1/4 cup chopped green onion

PREPARATION:
Put dashi soup stock in a pan and bring to a boil. Cut tofu into small cubes and add them to the soup. Simmer the tofu for a few minutes on low heat. Scoop out some soup stock from the pan and dissolve miso in it. Gradually return the miso mixture in the soup.
Stir the soup gently. Stop the heat and add chopped green onion. Remember not to boil the soup after you put miso in.

*Makes 4 servings
