Ingredients
1lb of floury potatoes
200 ml of cream
100ml of milk
1 clove of garlic, crushed
40g grated Gruyere cheese
15g butter (for greasing dish)
Salt and pepper

Preparation
Peel potatoes and slice very thinly. Place the sliced potatoes into a large bowl of cold water as you go to stop them going brown.
Rinse the potatoes in cold water to get rid of any excess starch and drain. Place the potatoes in the middle of a clean tea towel and pat them dry.
Method
Pour the cream, milk, garlic, salt and pepper into a large saucepan and place on the hob on a low heat. Let the liquid reach simmering point and place the potatoes carefully into the pan. Cook the potatoes for ten minutes and check with a knife to see whether they have softened. You do not want over cook your potatoes at this stage.
Take the pan off the hob and place the potatoes into a well buttered ovenproof dish. Cover the potatoes with liquid otherwise it will be too dry.
Sprinkle the grated Gruyere cheese over the top and season if you like.
Place in the middle of the oven at 180c and cook for 25 mins.
The dish is ready when the top is golden and bubbling.

Its a french potato dish, compromised of potato, cream, garlic, and cheese.

Basically you layer the sliced potatos neatly, pour cream over it then season well and add lots of garlic. Keep putting on these layers, untill the top where you top it off with cheese.
