How do I properly coat an Oreo truffle with chocolate?!


Question: Hello everyone. I have been making oreo truffles for a while now and I have never figured out a way to properly coat them with the melted chocolate. I want them to look like this: http://www.slashfood.com/media/2006/03/d... . What I've been doing so far as techniques are concerned, I freeze the oreo balls in the refrigerator for about 45 minutes. They are hard at this time and I melt the chocolate chips (Ghiradelli semisweet chocolate chips) in the microwave and drop a ball into the chocolate. Then I manually coat the truffle ball with the chocalte and I have to act fast or else the oreo truffle ball starts to melt within the chocolate. Does anyone have any suggestions as to how I can create a perfectly smooth chocolate coating on these oreo truffle balls? Thanks in advance! :D

Put the truffles on a roasting rack over a sheet pan. Heat the chocolate and spoon over the truffles, tilting the pan to get the sides. This method wont quite cover the bottom of the truffles but you could dip the bottoms in chocolate afterwards. Also the chocolate that collects in the bottom of the pan can be reused.
