1.First thing when you icing the cake, make sure that your cake is cold,
2. if your icing is too loose add powder sugar.
3. You can buy willton kits for decorating cakes. Available at Michaels
And you good to go...
You can use the same recipe but try using a piping bag. Or you can practice by putting some icing in a ziptop bag and cutting a small hole at the corner and trying different designs that way. Maybe cut back a tad on the cream cheese...not much tho...and it'll make it stiffer for you to decorate with.
ice the cake like you normally would, then go to the grocery store and get other additional things to decorate it with in the baking aisle. they have various small tubes of icing in different colors that you could use to write a 'happy birthday' message, different kinds of candy, candles, etc. if you're really into doing it yourself, all homemade, you might want to try looking at this website: http://www.cake-decorating-corner.com/
use more powdered sugar to make the icing thicker, it it gets too thick add a little bit of water or milk, this should make it easy to work with for decorating.
you can thicken the icing using more powdered sugar and if gets too thick you can use a dash of milk to soften it. it will get sweeter but the taste is good. also you cand use your reg.recp to ice it and royal icing to decorate. martha stewart.com has a good recipe
