Okay, you certainly must want to impress them and yet keep it simple and easy. Why not start with a simple dinner salad with a variety of choices for dressings and maybe a cup of soup. Whatever soup you choose, I would just buy canned and garnish it with croutons. Here are a couple of really easy recipes that will impress and are again quite easy. All you have to do is buy the ingredients, mix them together and then throw the stuff in the oven. Quite easy and they aren’t spicy. Here you go and I’m going to tell you exactly how to do it.



Salmon (makes 8 servings)
Ingredients
2 pounds salmon filets
2 tablespoons fresh lime juice
2 Tablespoons butter or margarine, melted
? teaspoon salt
Chopped pistachio nuts, if desired
Directions
Make Cranberry Pistachio Sauce (see below): Keep warm. Set oven control to broil. Spray broiler pan rack with cooking spray. Place fish, skin down on rack in broiler pan. Mix lime juice, butter, and salt and pour over fish. Broil with top 4 inches from heat 8 to 10 minutes or until fish flakes easily with fork. Top fish with sauce and sprinkle with nuts.

Cranberry Pistachio Sauce (topping for the salmon)
Ingredients
1 pound fresh cranberries
1 cup of sugar
1 jar (10 ounces) red currant jelly (just ask someone at the store to help you find it if you can’t locate it)
1 cup orange juice
? cup chopped pistachio nuts

Directions
Mix cranberries, sugar, jelly and orange juice in 2 quart saucepan. Heat to boiling, reduce heat and simmer uncovered for 20 minutes then skim off any foam that collects on the surface. Remove from heat and stir in nuts.

You could serve with your choice of sides. Whatever you think they would like… snap peas, green beans, asparagus, etc. Then for dessert you could make some wonderful little lemon bars. And they are about as easy as it gets. You just have to make sure you don’t burn anything…

Lemon Bars:
Crust:
2 cups flour
? cup powdered sugar
1 cup butter or margarine
Make dough and press into 9 x 13 pan. Bake at 350 for 20-25 minutes. Watch closely so it doesn’t burn. Reduce heat if using a glass pan.

Topping:
4 eggs, beaten
2 cups sugar
1/3 cup lemon juice
? cup flour
? teaspoon baking powder
Beat eggs, sugar, and lemon juice. Sift flour and baking powder and stir into egg mixture over hot baked crust and bake at 350 for 20-25 minutes longer. Again, watch so it doesn’t burn. If baked in a jellyroll pan it will be thinner, thus reducing cooking time and watch it closely.

You can do it! You can make a wonderful homemade meal and make a great impression. You go!!! It will be easier than you think. And, it won't take much time either.

try this salad.. it's easy to make and really quick..
cut tips of broccoli really finely, add 1 onion (chopped really fine), half cup of raisins, half cup of sunflower seeds and half cup of mayo (or as you like).. mix them together.. yummmmm

you can have this with chicken and rice oh it is sooo good

FOOTBALL BEAN DIP

Ingredients
2 cans refried bean (can be low-fat, vegetarian, whatever)

12 ounces Velveeta cheese (sometimes I add a little more)

1 jar chunky picante sauce

3 dashes Tabasco sauce (or similar)


Directions

1 Begin heating refried beans in a suacepan.

2 Cut Velveeta into cubes and add to beans.

3 Heat until cheese is melted.

4 Stir in picante sauce and as much Tabasco (or similar) as you like.

5 Serve with chips, a cold beer, and a good football game (Hook'em Horns).

Meatloaf and mashed taters and corn on cob and greenbeans and cornbread and for something sweet fix a pineapple upside down cake
and of course serve sweet tea.......don't forget to make coleslaw

I would make them a Pot Roast dinner! Most of the work is in the oven, so you can relax or get ready for company.

Serve with a nice green salad & some french bread. The pineapple upside down cake would be a nice dessert, I agree.

Get out a nice big platter, cut the meat & put the veggies (potatoes, carrots, onions...cooked with the roast) on the side. Set it on the table for a nice presentation & pass, "family style". They will love you!

Dad's Pasta:
About 3 or 4 diced tomatoes (better if fresh)
An onion or two (diced)
2 or 3 tbsp garlic
pesto (the basilic kind (not the tomato one, the green one by classico))
1 or 2 boxes of fusilli or rigatoni, whatever it's called (DON'T use spaghetti)
2 tbsp olive oil
oregano
Directions:
In a pot (preferably a large one), start boiling the water for your pasta. Follow the cooking instructions for the pasta.

In a very large frying pan (i use a stir fry pan) add your olive oil and turn the heat up to 8 (on the stove)
Once it bubbles, add your onions, once they get a bit brown, add your garlic, wait a bit, then add the tomatoes and pesto, sprinkle with oregano.

Once your pasta's done, strain it and put it in the stir fry pan, and stir until the pasta is evenly coated. Distribute portions (usually serves 4 or five), top with a few spoons of pesto, a couple of diced pieces of tomato, oregano, and some dried parsley flakes. If you want, you could also add a bit of parmesan.

Forget trying to impress them. That is a sure way to get into something that is too complicated. I agree with the post that suggested a pot roast. I am from the south so I would make chicken and pastry--dumplings to the rest of you, green beans and candied yams. For dessert maybe a pecan pie or if time failed me a pan of brownies, ice cream and hot fudge sauce. A successful dinner is one where there is enough food, a pleasant hostess, and lots of good conversation.
