This is a favorite Brunch (or anytime) meal of mine.
Hash Brown Casserole
Ingredients:
2lb.package hash brown potatoes (thawed...I use the shredded kind)
1 bunch green onions, chopped (green top, too)
1 cup (or more) green sweet peppers (or mixture of red, yellow, orange & green) diced
1lb. sausage, cooked until no longer pink..crumbly
1 cup ham...diced....(or Spam if desired)
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 8oz. bags shredded cheese
1/2 cup milk
12 eggs well beaten (can use Egg Beaters)
tabasco (optional)
sour cream (optional)
salsa (optional)
Instructions:
Lightly grease a 9 x 13 baking dish.
Spread potatoes over bottom of dish evenly.
Sprinkle sausage over potatoes,
then peppers,
mushrooms,
ham,
onions....all but 1/4 cup.
Mix eggs & milk & tabasco...pour slowly over all the ingredients in baking dish.
Cover with cheese.....remaining onions....crumbled bacon & olives over all.
Cover and refrigerate overnight (at least 4 hours).
Uncover and bake in preheated 375 degree oven about 35 - 45 minutes. Until it browns.
Serve with sour cream & salsa if desired.
(Potatoes can be lightly browned in a skillet first, if desired.)
Seems like a lot of work.... but worth the effort.
