Marinated grilled chicken is already a very healthy meal. There hasn't been a whole lot of research in the field of cooking herb health, probably because of the small amounts involved, but using them certainly can't hurt. Thyme, sage, and marjoram are good choices for chicken, and basically anything fresh. Fresh is always better than dried, because drying destroys a lot of micronutrients, whether or not we know what they are.
Just add some some of sauce to your chicken (Teriyaki is good) and add whatever herbs you choose to use. Bon appétit!
Hope this helps!
When it comes to the nutritional value of Fresh Herbs, none that I have found are reported, except for some Spanish ones because of their digestive properties, but these herbs listed below are recommended for Chicken, Turkey and other Poulty, Wild Game and Foul. Hope this helps!
POULTRY: For chicken only: basil or bay is always good; also caraway, coriander, cumin, dill, lemon balm, marigold, marjoram, mint, rosemary and tarragon; for both sage and savories; for turkey, thyme.
