Gingernut Biscuits
250 g sugar
1 tablespoon golden syrup
1 egg
250 g flour
1 teaspoon baking powder
1/2 teaspoon baking soda,
3 teaspoon ginger
1/2 teaspoon cinnamon
Preheat the oven to 180 C.
Mix together butter and sugar until pale and creamy, mix in golden syrup, egg and combined dry ingredients.
Roll into balls and place on cold trays, allowing enough room for biscuits to spread. Do not flatten biscuits. Bake 15 - 20 minutes until rich golden colour.

Delicious and very easy to make.
RHUBARB MUFFINS
Makes 12.
250g soft brown sugar
80ml vegetable oil
1 egg
2 tspns vanilla extract
250ml buttermilk
175g rhubarb, cut into 1cm dice
75g shelled walnuts, roughly chopped
300g plain flour
2 tspns baking powder
1tspn bicarbonate of soda
50g wheatgerm
For the topping:
2 tblspns Demerara sugar mixed with 1 tblspn ground cinnamon
Preheat oven to Gas Mark 6/200C. Put brown parchment paper or muffin cases into a 12-bun muffin tin.
In a large bowl, mix the sugar, oil, egg, vanilla extract and buttermilk. Stir in the chopped rhubarb and nuts. Sprinkle over the flour, baking powder and bicarb and add the wheatgerm. Fold together quickly until just blended but still rather lumpy.
Spoon into a 12-cup muffin tin lined with paper cases. Sprinkle liberally with the sugar and cinnamon mixture.
Bake for 20-25 minutes, by which time the sugar topping will be glistening and the muffins beneath a pale but definite gold. Eat warm and give thanks.

MILLION DOLLAR POUND CAKE
1 pound butter, softened
3 cups sugar
6 eggs
4 cups all-purpose flour
3/4 cup milk
1 teaspoon almond extract
1 teaspoon vanilla extract
Beat butter in a bowl with electric mixer; gradually add sugar, beating well at medium speed. Add eggs, one at a time, beating thoroughly after each addition. Add flour to butter mixture alternately with milk, beginning and ending with flour. Mix until just blended after each addition. Stir in extracts. Pour batter into a greased and floured 10-inch tube pan.
Bake at 300 degrees for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. Cool cake in pan for 15 minutes; remove from pan and let cool completely on a wire rack.
