Can't find a recipe! Can you help?!
Answers: Recently I found a recipe for Essential Moistening Syrup, Essential Buttercream Frosting, and Essential Classic Vanilla Wedding Cake. The book that they were in was called Wedding Cakes You Can Make by Dede Wilson. It is currently checked out of my library and I can't find it anywhere! Does anyone own it? And if you do would you be willing to share the recipes? Thank you!
Here is the recipe for the Essential moistening syrup:
To make the vanilla moistening syrup, bring 4 cups sugar and 4 cups water to a boil. Simmer for 1 minute. Cool to room temperature. Add 2 teaspoons vanilla extract. Refrigerate until needed.
I don't know the book but I will see if I can find it on-line.
look up Wilton - they have great website including everything you need to know to make wedding cakes

syrup is easy. equal weight of water and sugar, like 100 grams of sugar to 100ml of water. boil it. be careful not to overboil it which will become caramel syrup. you want it to be a water syrup. so when it boils. it's done.
buttercream is also easy. but you need to make it in a cool climate or weather. i know the classic way of making it, not the easy american way. first, beat the yokes, until it's lemony in color at high speed, then boil sugar and water to soft ball stage. then carefully incorporate the hot syrup into the beating yolk mix. you need to be very careful at this stage. then when the syrup is incorporated, be sure that the yolk is not cook, when it cooks, then your mixture with split or separate, then you need to start all over again. at this point, you need to incorporate cut up butter cubes into the mixture. this buttercream is harder to make than the american way of powdered sugar and butter mixture, but this is more delicious than the american buttercream, which is grainy esp if you feel the cream with you tongue at the top of your palate.
