Whats a good breading mixture for fried catfish?!

The answer is very simple. Corn Meal. It is the ONLY breading to use on catfish.

My famous catfish

1. Buttermilk (Place in bowl and allow catfish to marinate in it at least 20 minutes
2. Eggs (beaten place in bowl, dip fish in after marinate)
3. Corn Meal (I also use Louisiana fish fry seasoning and mix it in about 50/50 with plain corn meal. You can buy it at most grocery stores and Wal-Mart supercenters. Place fish into corn meal after eggs)
4. place fish on pan to be fried. Sprinkle Tony Cacheres Cajun seasoning on fish and begin frying.
5. I only use canola oil

This recipe has been VERY successful for me and I continuously receive requests from family and friends to have fish fry's. I have also used this recipe on chicken and shrimp and people LOVE it. I hope this helps.

COUNTRY FRIED CATFISH

25 pan-dressed catfish, fresh or frozen (6 oz. each)
2 lg. eggs, beaten
1/4 c. milk
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. flour
2 c. bread crumbs
Tartar sauce (optional)

Thaw fish if frozen. Combine eggs, milk, salt and pepper. Combine flour and bread crumbs. Dip fish in egg mixture and roll in flour mixture. Fry in deep fat 9350 degrees) for 3-5 minutes or until fish flakes easily when tested with a fork. Drain on absorbent paper. Serve with tartar sauce.

CRUNCHY FRIED FISH

1 lb. white fish; haddock, cusk, sole, flounder, catfish
1 egg
1/2 c. milk
Splash of water or beer
1 c. corn flour
1 c. white flour
3 tbsp. flavored bread crumbs
Seasonings

Mix water, egg and milk in one bowl. In separate bowl mix flours and bread crumbs, add seasonings. Soak chunks of fish in liquid then coat in flour mixture. Fry in hot oil, deep skillet or "Fry Daddy" until thoroughly cooked, depending on thickness, 3 to 5 minutes.

We always used cornmeal, salt and pepper, and maybe some Cajun seasoning in there. It was good. They sell fish seasoning at Walmart in on the seasoning aisle. I think it is Lowery's Seasoning or something like that. I miss a good ol' fashioned fish fry with home made hush puppies. fries, slaw, beans, fried pickles and the works. My mouth is watering just thinking about it.

CORNMEAL is the only acceptable way for catfish, you may add some spices to suit your taste, but all in all, catfish is a mild tasting fish and you do not want to overpower it with anything too strong. In the South, it is all about the cornmeal, and be sure your oil is at 375, do not over cook. The finished product should be golden brown, crisp on the outside and moist inside. Soaking the fish in buttermilk, or even water helps the end result. A few dips might be suggested, tartar dip/sauce/Ranch/and one spicey.

this is what i do. Pat the fish dry with a kitchen towel. Mix some breadcrumbs with sea salt, black pepper and smoked paprika. cover the dish with breadcrumb mixtute completely, cover with foil and leave in the fridge for at least 1 hour. fry in hot oil for 4-5 minutes on each side until golden and cooked inside.

My mom used to only use cornmeal and a little salt. mmmmmm Last time I ate fish with them she had bought some beer batter. She and dad were SO proud that they could make fish like Long Jjohn Silvers. ugh So I had her make mine with just cornmeal....it's the best way! And, all I've EVER seen my family use as a dip was ketchup-no fancy tartar sauce for us lol

3/4 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons salt
1 teaspoon cayenne pepper
1/4 teaspoon garlic powder
4 Catfish fillets
Vegetable oil
For garnish Sliced tomato and parsley sprigs

Instructions:
Step 1. Combine cornmeal, flour, salt, cayenne pepper and garlic powder. Coat farm-raised catfish with mixture, shaking off excess

Step 2. Fill deep pot or 12-inch skillet half full with vegetable oil. Heat to 350 degrees. Add catfish in single layer, and fry until golden brown, about 5 - 6 minutes, depending on size. Remove and drain on paper towels.

My family has used House Autry Seafood breader for as long as I can remember, it's the best.

50/50 mix of corn meal & white flour. Pepper & salt to taste, I go heavy on the pepper.

dip fish in milk or buttermilk, roll in flour mix, fry at 375 till golden brown. serve with hot sauce & cornbread

To coat 4 - 6 oz fillets
1 cup cornflake cereal crumbs
1/4 tsp celery salt
1/2 tsp onion powder
1/4 tsp paprika
1/8 tsp pepper

mix in a dish for coating

1 egg white
2 Tbsp skim milk

mix in dish

dip fillets in egg/milk mixture and then into the dry
