Question: How about New Orleans Breakfast puffs?

Vegetable Oil
1-1/2 cups regular Flour
1/2 cup powdered (icing)sugar
1 teaspoon baking powder
1 teaspoon salt
3/4 teaspoon nutmeg
1/2 cup milk
1/2 cup water
1/4 cup Vegetable Oil
1-1/2 teaspoons grated lemon peel
3 large eggs
Powdered sugar (Icing Sugar)

PREPARATION DIRECTIONS:1.Heat 2 or 3 inches oil to 365oF in deep fryer or deep saucepan.

2.Combine flour, 1/2 cup powdered sugar, baking powder, salt and nutmeg in small bowl.

3.Combine milk, water, oil and lemon peel in medium saucepan. Heat to boiling on medium-high heat. Add flour mixture all at once. Beat by hand until mixture pulls away from side of pan and forms ball. Remove from heat. Cool slightly.

4.Add eggs, one at a time, beating after each addition.

5.Drop dough by tablespoonfuls into oil heated to 365oF. Fry 3 or 4 at a time for 4 to 6 minutes or until golden brown. Turn as needed for even browning. Drain on paper towels. Sprinkle with powdered sugar.

Chocolate Chip pancakes. Just get pancake mix,and follow the instructions. Then add chocolate chips to the pancakes while you cook them. Good luck!

How about French Toast!

2 Eggs
1/4 cup milk
1/4 teaspoon vanilla
1 tablespoon sugar
dash of salt
(dash of cinnamon, optional)
4 slices of bread (of your choice)

Mix eggs & everything, but bread, until well blended. Heat a skillet or griddle & grease with butter or spray. Dip bread in mixture & cook until browned.

Serve with syrup or powdered sugar. Simple & yummy.

Baked Cheese Omelet
Serves 6

8 eggs
1/3 C. sour cream
2 C. Monterey Jack cheese, grated (can substitute cheddar, muenster, etc.)
salt and pepper to taste
choice of additions: chopped green onions, fresh dill, sauteed mushrooms, diced ham, chopped zucchini or as desired.

Preheat oven to 350 degrees. Beat eggs until frothy, add sour cream, mixing well. Stir in cheese, salt and pepper, and prepared vegetables and/or meat as desired. Pour into a greased 8x8 baking pan. Bake 25-30 minutes, or until casserole doesn't wobble when jiggled.

Farmer's Casserole
3 cups frozen, shredded hash brown potatoes
3/4 cup shredded cheddar cheese or Monterey Jack with jalapeno peppers
1 cup diced, fully cooked ham or Canadian bacon
1/4 cup sliced green onion
4 beaten eggs or 1 cup frozen egg product
1-12 oz. can evaporated milk or skim milk
1/4 tsp. pepper
1/8 tsp. salt

Grease 2 quart square baking dish. Arrange potatoes evenly over bottom. Sprinkle with cheese, ham, and onion . In a bowl, combine eggs, milk, salt, and pepper. Pour over potato mixture. Bake uncovered in a 350 oven 40-45 minutes (or 55-50 minutes if made ahead). Cover should be set. Let stand 5 minutes before serving.

This may be made the night before serving. Serves 6.


Fajita Scramble
1/4 cup chopped green pepper
1/4 cup chopped red bell pepper
1/4 chopped onion
8 eggs
1/2 tsp fajita seasoning
1/8 tsp hot sauce
1/4 cup milk
3/4 cup shredded Mexican cheese (Monterey jack, cheddar, etc)
4 fajita size tortillas
Chopped fresh cilantro
Salsa


Sauté vegetables in large frying pan, with 1 teaspoon of butter, until soft. Beat eggs, seasoning, hot sauce, and milk, with a whisk or fork, until well blended. "Scramble" eggs while cooking until semi-firm. Add 1/2 cup of the cheese and cook until melted. Warm the fajitas by placing in a microwave for 25 seconds. Place 1/4 of scrambled egg mixture in each fajita and roll up. Top each fajita with the remaining cheese and heat in the microwave until the cheese melts. Sprinkle fresh cilantro over the fajitas and serve with salsa on the side.

Serves 4

make like an egg mcmuffin at home.

mix your eggs with a little bit of milk and salt, then pour them into a large flat-bottomed pan - kind of like a very thin omlette. then fold up the egg and put it on a toasted bagel/english muffin/bread. top with cheese and the variety meat of your choosing, such as bacon/ham/sausage/steak.
