Quick, Easy -N- Fast Recipes Crostini Appetizers

These toppings can be prepared ahead for quick assembly.

Crostini: Slice 1 baguette French bread into 1/4" slices. Using 1/3 cup olive oil, brush both sides of all slices. Arrange on baking sheet. Preheat broiler; broil 6" from heat source until golden brown (about 2 min.). Turn; continue broiling until golden brown (1 1/2-2 min.). Remove to wire rack to cool. Store in airtight container up to 5 days. Amount: 55 slices.

Mozzarella Topping: In small bowl, combine 1 cup fancy shred mozzarella cheese, 8 sundried tomatoes in olive oil and herbs, drained, chopped and 2 tbsp. sliced green onions. Spoon 2-3 tsp. on each crostini. Bake in a preheated 400°F. oven until cheese melts (5-7 min.). Amount: 24-36 crostini.

Bacon Cheddar Topping: In small bowl, combine 4 slices microwave bacon, cooked, crumbled, 1 cup fancy shred sharp Cheddar cheese, 1/4 cup mayonnaise, 1 Roma tomato, seeded, chopped and 1 tbsp. sliced green onions. Spoon 2-3 tsp. on each crostini. Bake in a preheated 400°F. oven until cheese melts (5-7 min.). Amount: 20-30 crostini.

Spinach Topping: Spoon 2-3 tsp. Spinach Dip on each crostini. Sprinkle with fancy shred Parmesan cheese. Bake in a preheated 400°F. oven until slightly browned on top (5-7 min.). Amount: 40-55 crostini.

Cheesy Artichoke Topping: In medium bowl, combine 1 (14 oz.) can artichoke hearts, drained, diced, 1 cup mayonnaise, 1 cup freshly grated Parmesan cheese, 1 (4 oz.) pkg. shredded Monterey Jack cheese, 2 tbsp. chopped hot red jalapeno peppers and 1/2 tsp. minced garlic. Spoon 2-3 tsp. on each crostini. Bake in a preheated 400°F. oven until cheese melts (5-7 min.). Amount: 40-55 crostini.

Caramelized Onion and Roasted Pepper Topping: In medium skillet, melt 2 tbsp. butter. Sauté 1 small onion, sliced until translucent (about 10 min.). Stir in 1 cup chopped roasted red pepper. Spoon about 1 tbsp. on each crostini. Sprinkle with crumbled Stilton cheese. Bake in a preheated 400°F. oven until cheese melts (5-7 min.).

Amount: 16 crostini.

they have a ton of appetizer recipes. i have brought little quiches in the past-those go over well. i have also made little pinwheels. just roll out cresent dough flat, put some cream cheese and whatever else sounds good, like rosemary and garlic and cut into rolls. those are cheap you can make a ton.

SAVORY CHICKEN BACON BITES (Paula Deen)
you will have to adjust the amounts for that many people

RUB: ? c. brown sugar
2 T. chile powder
Mix well.

Raw chicken cubes
Bacon cut to lentgh to cover chicken, hold with toothpick.

Preheat oven to 350’

Wrap chicken cubes in bacon, coat with rub.

This recipe for meatballs is always a big hit when I make them. I put them in a crock pot to keep them hot.

1 pound lean ground beef
1 egg
2 tablespoons water
1/2 cup bread crumbs
3 tablespoons minced onion

1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
Bake in preheated oven for 20 to 25 minutes, turning once.
In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.

I was thinking meatballs, but that still might be too expensive. I did some quick math and if you wanted to make 75 meatballs at 3 ounces each, you'd need about 15 pounds of hamburger meat (plus other ingredients). The cost would be around $25 - $35 dollars.

Ritz crackers with bacon wrapped around them, just get bacon ,wrap it round cracker, bake cracker and bacon on 400 untill bacon is crisp! also, try chicken wings with different types of dips such as ranch, hot sauce, etc..have fun!!

you can double it, or do a recipe and a half (90 servings). just bring a couple bags of pita bread cut into triangles, crackers, or veggies!

Hummus ;Makes 60 servings-

stores in the refrigerator up to one week, better if it sits overnight to marry the flavors

30 c cooked garbanzo beans
6 c white sesame seeds, lightly toasted
6 c olive oil (preferably, organic, virgin cold pressed)
1 c Grape Seed Oil Vegenaise (optional)
5 c lemon juice
1 T cumin
? c salt
1 t red pepper

When working with such large quantities as 30 cups of cooked garbanzo beans it is vital to have a good food processor, blender, or juicer to work with. Assemble all your ingredients.

Begin by processing the garbanzo beans through a food machine to make a paste. A Champion Juicer really simplifies the procedure, pureeing rapidly with the blank screen in place; even a hand cranked food mill works well.
Toast the sesame seeds in two dry frying pans, stirring until they just begin to turn a light brown. Watch carefully; using scorched sesame seeds will ruin your dish. Using the food processor or blender, combine the toasted seeds with the olive oil and blend until a smooth paste is formed.

Add the garbanzo puree,lemon juice, and vegenaise, to the sesame paste, mixing until smooth. Note: at least one half of the lemon juice should be fresh squeezed or fresh frozen.
Stir the cumin and red pepper into the salt before adding to the mixture, to be sure the flavors are distributed. Sprinkle the seasoned salt across the hummus and complete the final blending. Taste and correct for lemon and salt.

Store covered and refrigerated for at least 12 hours and up to one week.

Serve the delicious hummus with warmed sliced bread or pita bread. Traditional serving is to spread the hummus over a platter, placing indentations across the surface with the back of a spoon. Then drizzle an extra amount of olive oil into an indentation on top of the hummus and sprinkle with fresh chopped parsley or sweet paprika as a garnish.

This is an appetizer that is really, really good, and inexpensive:

You will need:

Pepperonis.
Pepperoncinis.
Cream cheese.

Hollow out all of the pepperoncinis. Make sure to get all of the seeds. Fill the insides of the pepperoncinis with cream cheese. Wrapp the pepperoncini with a pepperoni and stick a toothpick in the middle so that pepperoni will stay.

It takes some time to hollow out the pepperoncinis, so if you end up making these for 75 people, you'd probably want a few people to help you. But trust me, these are incredibily addicting.

COUNTRY FRITTATA

3 tbsp. olive oil
1 lg. onion, chopped
1 red bell pepper, chopped
1 c. sliced fresh mushrooms
12 eggs
3 oz. pepperoni, sliced very thin and chopped
1/2 c. milk
1/2 tsp. black pepper

Preheat oven to 350 degrees. In 10 inch cast-iron skillet, heat oil over medium-high heat. Add onion, red pepper and mushrooms; cook, stirring occasionally, 7 to 8 minutes until vegetables are tender.
Place in a rectangular baking dish

In large bowl, whisk together eggs, pepperoni, milk and black pepper.
Pour over vegetables. Place in oven; bake 15 to 20 minutes until egg mixture is set.
Slice into portions 4"x 1 1/2" serve warm.

I would make one in advance to be able to see how many portions you would get, then scale it up so you will get the number you require.

I think they would be nice cold, but you may be able to warm them at the party, unless others are intending to use the oven.
