Cookies without eggs or vanilla?!


Question: Okay folks. I am in serious need of something treatlike to eat. But my cupboards are not the most comprehensive cooking arsenal you've ever seen. Here's what I DON'T have:

-Eggs
-Vanilla Extract (This depends. I have heard that it never goes bad, but the date is from 2003 and when I smelled and tasted it, it wasn't like vanilla at ALL, it was more like alcohol. has it gone off?)
-Shortening
-Baking soda
-Powdered (confectioner's) sugar.

I have a random box of yellow cake mix, but no eggs. Also, no icing.

Suggestions, please.

Shortbread cookies. Four ingredients: flour sugar and butter and a pinch of salt. You can add other things if you want like chocolate chips, nuts, lemon zest, lime zest, etc....the sky is the limit. They are one of my favorites.

yup.. this guy below me is right

no-bake cookies are good. no eggs or vanilla required. not sure about the other stuff, whether u have it or not. check out site below for recipe. it says use vanilla but u don't have to, it tastes fine without it.

Fruity Puree COokies
3/4 cup brown sugar
3/4 cup canola oil
1 cup apple sauce
1/2 tsp salt
3 cups flour
anything else you want to add, chocolate chips, nuts..whatever
Heat the oven to 350. Combine the sugar and oil till smooth. Add the rest of the ingredients, one at a time, mixing till smooth. Refrigerate for 30 minutes. ROll 1 tsp pieces into balls and place on a greased cookie sheet. Flatten cookies with your floured fingers or a floured fork. Bake for 12-14 minutes. Remove cookies right away and let cool on a plate.
My daughter loves these..it came from a cook-book for babies with allergies..that's why there's basically nothing in it.
