Best tasting white frosting for chocolate cupcakes?!
Answers: I'd like a white frosting because I plan to either spray them with colored food spray or add some dye to color the frosting. Should I just do a plain buttercream? Or what about white chocolate? I've also seen some recipes with cream cheese icing, but have never worked with it. Does it have to stay refrigerated? I want something that I can put in a decorators bag and will go onto the cupcakes nicely ans stay put!
If you like marshmellows, try 7 minute frosting. It's super-white, glossy and looks like a billowy cloud on cakes!
1 1/2 cups sugar
1/4 teaspoon cream of tartar or 1 tablespoon white corn syrup
1/8 teaspoon salt
1/3 cup water
2 egg whites
1 1/2 teaspoons pure vanilla extract
Place sugar, cream of tartar or corn syrup, salt, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.
This frosting is really easy to frost with. It dries on the cake and gets crisp on the outside like meringue and stays marshmellowy on the inside. You don't need to bother with a decorator's bag: you can just take your cooled cupcakes and dunk the tops into the bowl of frosting!
Cream cheese frosting is the only way to go
i would go with white chocolate everyone loves chccolate.. .they will sure go over good with everyone...
I love cream cheese frosting with chocolate cakes and cupcakes.
Cream Cheese Frosting:
* 1/2 cup of butter (1 stick), room temperature
* 8 oz of Philly cream cheese (1 package), room temperature
* 2 - 3 cups of powdered sugar
* 1 teaspoon of vanilla extract
1 With an electric mixer, mix the butter and cream cheese together, about 3 minutes on medium speed until very smooth. Scrape down the sides and bottom of the bowl to ensure even mixing.
2 Add the vanilla extract and mix. Slowly add the powdered sugar. Keep adding until you get to desired sweetness.
3 Either spread on with a blunt knife or spatula, or spoon into a piping bag to decorate your cake or cupcake.
I like this recipe because you can reduce the amount of sugar and butter and still get a good result.
I love cream cheese frosting but mine never is really white, white.....I think the recipe for the marshmallow frosting would work perfect for what your wanting to do.
