Good quality knives to buy?!
Answers: I would like to purchase some new knives. I am just an at home cook but would like some good quality knives that won't rust ( I have stainless steel ones that have) and stay sharp for a good period of time. I don't mine spending more on them just lost on what to look for. Can you help? I am looking for general knives you would use everyday, chopping, tomato knife, fileting. Thanks!
Wustoff is the Cadillac of knives. Expensive but well worth the price. JA Henckels ( German stainless steel, made in China) knives are also good and very reliable. So is Sabatier ( French, high carbon stainless).
I have had both Henckels and Sabatier for years, but I usually reach for Sabatier because it is more comfortable in my hand. That is something to consider other than just the blade.. how does it feel when you are working with it. Is there ease when preparing food? Many knives with excellent blades have heavy handles, so do try them out before purchase.
japanese knives are good so are german ones. If you want the best, they are a little on the expensive side, for a chef knife you are looking at around $150(Hinkle, a knife brand)
Wuhstoff-Trident (sp) would be at the top of the affordable knives. Had mine for years and love them.

My ex husband manages a meat dept for a grocery store and he gets a set of knives from a knife wholeseller every year for Christmas. He has brought me several sets over the years we were married. My favorite was forschner.I left a link above for some of these knives on eBay.They are expensive but well worth it.I got the knives when we divorced and have been using then for at least 10 yrs. I LOVE THEM !!!!!!
I think my fiance and I registered for Henkel knives...not sure how to exactly spell it! They are one of the best brands and worth the cost...according to my fiance, who likes to cook more than I do!!
I've always wanted to try some of the cutlery on the Food Network website. Here's the link. They have some good deals right now:

Your knives sound like they aren't so bad. Before you buy new...sharpen your knives and use a steel to straighten the edge.If you don't know how.Go and have one knife sharpen....and then buy a steel if your don't have one.
