Tuna Rice with cheese casserole
1/4 cup minced onion
1/4 cup chopped celery
9 tablespoons butter, divided
3 tablespoons flour
1/8 teaspoon pepper
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
2 cups milk
12 ounces shredded Sharp cheddar cheese
1 can (7 ounces) tuna, drained and flaked
1 cup cooked frozen or canned peas, drained
4 cups hot cooked rice
1/2 cup fresh bread crumbs
PREPARATION:
In a skillet over medium-low heat, cook onion and celery in the butter until tender, about 5 minutes. Stir in flour, pepper, and dry mustard. Continue cooking, stirring, until smooth and just bubbly. Add Worcestershire sauce and gradually stir in milk.
Cook, stirring, until thickened. Add about half of the cheese to the sauce mixture; stir until melted. Add flaked tuna and peas. Spoon half of the hot rice into a shallow 2-quart baking dish and spread about half of the remaining cheese over the rice; top with half of hot mixture, then repeat layers. Melt remaining butter and toss with the bread crumbs. Sprinkle crumbs over the top. Bake in a preheated 400° oven for 20 minutes or until the top is lightly browned

I've always had tuna casserole and tuna melt sandwiches before but never tuna soup. Interesting concept though, it maybe good in a cream base :)
You mean like good old Tuna Noodle Casserole?
8 oz. noodle - cooked and drained
12 oz. tuna - drained and flaked
1 can condensed Cream of Mushroom Soup
1/2 can milk
1 cup frozen green peas
1/4 cup chopped onion
1 to 2 stalks celery - chopped
Stir all of the above together and put in 2 qt. casserole that you've sprayed with PAM. Top with crushed potato chips and/or shredded cheese. Bake in 325 to 350 F oven for 30 to 45 minutes until well heated. If you are using the cheese on top, don't add it until near the end of baking time.
I tried a recipe I picked up from watching Everyday Italian on the food network. Giada cleaned out her pantry and did a pasta dish using tuna, olives, tomato sauce and spaghetti. It was really good. Yeah, I was surprised too.
Fresh cooked tuna is great in casseroles. In fact, I won't eat that canned stuff anymore. The key is too cook the tuna fillets only 1/2 way through in a frying pan. Then chop it a bit and add it to the Tuna casserole. This prevents the Tuna from being overcooked while the casserole is in the oven-Perfection!!! You can also make Tuna Chow Mein, just like Chicken Chow Mein, just add a can of Tuna.....MMM. This was served over rice in my elementary school back in the 1960's.
Tuna noodle casserole is an old-time classic family dinner .... probably originated during the Depression...
You can make tuna pizza too.
My mom used to make a Tuna chowder which was to die for but I don't remember how to make it. Sorry. It was a lot like New England Clam Chowder.
I used to cook a tuna casserole. I have not cooked that in a long time. I don't think I would care for it in soup though. I like tuna but I prefer it cole like in a sanwich or salad.
