i buy a bag of mixed veggies, brown gravy mix, instant potatoes and shredded cheese. cook the veggies in a pan mix in the gravy, put that in the bottom of the pan and after you cook your potatoes spread that over the mixed veggies and gravy and add cheese. 400F for about 30 mins.

RECIPE?? For shepherds pie? Surely you just cook some mince with chopped onions, carrots, gravy and put some mash on top, maybe a sprinkle of grated cheese and wack it in a moderate oven til' its browned.

This is easy and good.

INGREDIENTS
1 1/2 pounds lean ground beef

1 cup frozen corn niblets, thawed

DIRECTIONS

In 12-inch skillet cook ground beef and onion until browned; drain grease. Add beans, corn, tomatoes, gravy, thyme and salt. Cook until heated through. Spoon beef mixture into casserole dish. Spread Simply Potatoes? evenly over beef mixture. Bake 30 to 35 minutes or until edges are bubbly. Remove from oven.
Heat broiler. Broil casserole 4 to 6 inches from heat, 3 to 5 minutes, until Simply Potatoes? are lightly browned

I'm making one tonight:
First I bake enough potatoes to mash for bottom
(I bake them so as to retain flavor, cool then peel and mash with butter and a little milk)
Mix ground beef with chopped onion, green pepper, garlic, a little sage, egg, and breadcrumbs...mix well and layer on top of mashed potatoes
cover this with a drained can chopped tomatoes, plain or seasoned.
bake 350' for 1 hour

Shepherd's Pie Recipe

Classic dishes rule and always give you an option to fall back on. I have a couple of recipes in my brain box that I like to break out when I want something easy for most people to eat. I’m sure you have a couple like chicken cutlets, pasta and sauce or a grill cheese made with an iron, who knows? After a while no thought is needed to what is needed and chances are that you have the ingredients on hand. I often tell people who want to learn how to cook to learn a couple of dishes that you know you can cook and go from there. Here's an easy one.

1 lb. ground lamb or ground beef which ever you prefer

6 shallots diced

1 carrot diced

2 tbsp oil

1 bay leave

Fresh thyme

3 tbsp butter

1 tbsp tomato paste

Splash of Worcestershire sauce

4 cups lamb stock or if using beef use beef stock

1 cup peas
1 lb. peeled potatoes

? cup milk

? cup butter

2 egg yolks

Heat the oil and butter in a large sauce pan and sauté shallots, carrots and bay leaf till shallots are translucent then add the ground meat till cooked. Next add stock, Worcestershire sauce and tomato paste and cook for about 20 minutes and the mixture is a sauce. Then add peas, thyme and salt and pepper to taste.
Next boil the potatoes till they break apart with a fork and mix with the remaining ingredients.

Now put meat mixture into a baking dish then cover with potatoes and bake on 375 for about a half hour and the potatoes are golden brown. Eat!!!

SHEPHERDS PIE (POOR MANS PIE)

1 lb. ground beef
1 can peas
1 can sweet corn
1 medium onion, diced
1/3 c. sugar
8 medium potatoes
2 c. shredded sharp cheddar cheese

Boil potatoes, mash and season to taste with milk and butter.
Brown ground beef and onion with salt and pepper. When cooked, add peas, corn, sugar. Let simmer until heated through.

In 13x9 pan place meat and vegetable mixture in bottom of pan. Cover with mashed potatoes and sprinkle cheese on top.

Place in oven on BROIL until cheese is bubbly or light brown



American Shepherd's Pie

"This is an 'Americanized' version of that old standard, Shepherd's Pie. My family loves it! You can prepare your mashed potatoes as you normally would -- adding butter, milk, sour cream, whatever!"

1 pound lean ground beef

1 (10.5 ounce) can condensed vegetable soup

3 cups mashed cooked potatoes
1 cup shredded Colby longhorn cheese


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 2 quart baking dish.
In a large skillet over medium-high heat, stir and cook ground beef, onion and celery until juices run clear. Drain. Pour mixture into baking dish with vegetable soup and thyme; stir well. Spread mashed potatoes on top.
Bake 20 minutes. Sprinkle shredded cheese on top and bake 5 minutes more, or until cheese has melted.

1 clove garlic, minced
1 cup green beans
1 cup tomatoes, diced
2 potatoes, cooked and mashed
1 egg, beaten
1/2 cup water
1/4 cup shredded Cheddar cheese (optional)


DIRECTIONS
Preheat oven to 350 degree F (175 degree C). Coat a 2 quart casserole dish with cooking spray.
Heat oil in a large skillet over medium heat. Cook onion in oil for 5 minutes, stirring frequently. Stir in the ground beef and basil, and cook and stir for 5 more minutes. Mix in the garlic, green beans, and tomatoes, and simmer for 5 minutes. Transfer beef mixture to prepared dish.
In a mixing bowl, mix together the mashed potatoes, egg, and water. Spread evenly over meat mixture.
Bake in a preheated oven for 15 to 20 minutes, or until potatoes start to brown on top. Sprinkle with cheese, and continue cooking for 5 minutes.

Do you like Shepard's Pie (with ground lamb) or Cottage Pie with (ground beef)? There is a difference! I find lamb too strong. If I make it it is a mixture of lamb and beef. I prefer all beef.

Simple and easy - amounts depend of how many serving you need - but all of it is to your taste. If you like onions add more onions, like more cheese add more cheese!

I brown a diced onion (or 2) in a little oil then add about a pound of small diced or ground (minced) meat ( or more or less?) I brown this until cooked then add 2 to 3 small diced carrots ( 3/4 to 1 1/2 cups?!) I cook this gently - in the meantime I have made some mashed potatoes (2 - 4 cups) and seasoned with butter, salt and pepper, grated some cheddar cheese (you could use a combo of different types). Back to the meat mixture - you need to salt pepper to taste and add a teaspoon or two of dried tarragon. Now the next part is up to you - you need a gravy/binder . I make a roux and then add it with some beef stock. You can use Bisto or another instant gravy, or a mixture of water, flour and beef cubes- whatever you want. Cook a bit to thicken( 5 minutes or so) and put meat mixture in a casserole dish, top with the mash then the cheese and pop it into a 375 degree oven until cheese is golden and bubbly. I would put the casserole on a cookie sheet because it may bubble over a bit if it is filled high.

1 onion, diced
1 tablespoon olive oil
1 lb. lamb, minced
1 clove garlic, crushed
1 large carrot, diced
1 beef stock cube
1 lb. chopped tomatoes
1 tablespoon corn flour
3 tablespoons tomato puree
pinch of salt and pepper
2 lb. potatoes
1 stick butter
If made with beef, it would be known as cottage pie.
Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.
Meanwhile, peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste.
Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp.
Delicious topped with melted cheese.

Shepherds Pie is actually made from minced lamb and Cottage Pie is made from minced Beef.
Whichever you use its tasty.
