This is my favorite way to have Italian Sausage. It's a copy cat recipe of Olive Garden's Zuppa Toscano:

? cup sliced onions
2-3 minced garlic cloves
1 quart chicken stock
2 medium potatoes, sliced
2 cups kale
1 lb Italian sausage
? cup heavy whipping cream
a few dashes of Tabasco sauce, to taste
1 tsp Pepper
1 tsp Salt
1 tsp Italian seasonings

Brown sausage with onions and garlic; drain. Add chicken stock, potatoes, Tabasco, and seasonings. Bring to simmer for 15 minutes. Add greens and whipping cream and simmer for 5 minutes more and serve.

SPINACH LASAGNA WITH ITALIAN SAUSAGE

1 pk. Italian sausage
1 onion chopped
4 cloves garlic, minced
1/4 c. olive oil
2 (15oz) cans whole tomatoes
1 (15oz) can italian diced tomatoes
2 (8oz) cans tomato sauce
2 (4oz) cans tomato paste
1 tsp dried oregano
1 tsp dried basil
1 tsp salt (or to taste)
1/2 tsp ground black pepper (or to taste)
1 bay leaf

Cheese Filling:

1- 16 oz container ricotta cheese
1 egg
1 10-oz package frozen spinch, cooked and drained well
1/4 tsp pepper
1/2 tsp dried basil
1/4 cup Parmesan cheese
topping:
3 cups mozzarella cheese
1/4 cup Parmesan cheese
cooked lasagna noodles, enough to make 3 layers in 13 x 9 baking dish.

The sauce can be made in a Crock-pot.

In Crock-pot:

On high setting, add olive oil, onions, and garlic and let simmer until onions are clear.
Meanwhile, cook Italian sausage in separate pan on stove and cut into bite size pieces. Once onions are cooked, add tomatoes, tomato paste and sauce, oregano, basil, salt, pepper, bay leaf and cooked Italian sausage. Stir until mixed.

Cook on high in crock pot for 4-6 hrs. or until sauce is dark red rich tasting. Stir frequently during cooking.


To prepare filling:

Add ricotta cheese, cooked drained spinach, egg, basil, pepper, and Parmesan cheese in bowl and mix well.


When ready to prepare lasagna:

Add 1/4 to 1/2 cup of sauce in bottom of 13 X 9 baking dish. Cover with noodles. Cover noodles with 1/2 of the filling mixture and top with 1 cup of mozzarella cheese.
Add 1 cup sauce. Repeat one more time. Add another layer of noodles and top with 1/4 cup extra Parmasan cheese and the remaining mozzerella cheese.

Bake at 350 degrees covered with foil for 40 minutes.

Uncover and bake an additional 10-15 minutes or until cheese is lighly brown.

Delicious!

Slice it up, Brown it in a pan with onions and peppers (red, yellow or green or a combo). Add spaghetti sauce and some cooked penne.

Or make a soup.

grill it on a bbq pit then eat it off a stick, dipping into mustard and BBQ sauce.

This IS an everyday dish for me... I've made it once a week for over 25 years:)

SAUSAGE & PEPPERS
2 pkg. Italian sausage (I get 1 mild & 1 hot) - cut in 1" pieces
3-4 bell peppers (I like a mix of all colors)- cut up
1 onion, sliced
1 15-oz. can diced tomatoes (I like with roasted garlic)
crushed garlic
olive oil
Cooked mostaciolli, penne or ziti
Brown the sausage in the olive oil; add the garlic, peppers & onion, cover and simmer at least 45 min. Add the tomatoes and simmer at least another 15 min (or up to several hours) ... Serve over the pasta

There is a killer recipe by Nigella Lawson Sage-Roasted Chicken and Sausage (see link below). I used Italian sausage last night as a layer in lasagna and it was perfect! What about using it in stuffing mix and stuffing it in pork chops or chicken breasts/thighs?

Sunrise Sausage Sandwich
2 servings
1 tsp. oil
1 frozen Italian Sausage, cut into 1/2-inch-thick slices 1/4 cup chopped green pepper 1/2 cup cholesterol-free egg product 2 crusty sandwich rolls, partially split HEAT oil in nonstick skillet on medium heat.

ADD sausage and peppers. Cook 5 min. or until lightly browned, stirring occasionally. Add egg product; cook and stir 2 min. or until egg product is set.

SPOON evenly into rolls. Serve with hot pepper sauce, if desiired.

ITALIAN SAUSAGE AND CREAMY TOMATO
BASIL SAUCE ON RIGATONI

1 lb. Italian sausage
1/2 c. chopped onion
2 cloves minced garlic
1 jar Ragu sauce (28 oz.)
1 tbsp. basil
1/4 tsp. pepper
1/2 c. creamy Parmesan salad dressing (or you may use creamy dressing with
Parmesan cheese added)
1 tbsp. fresh or dried parsley

Cook 1 lb. Italian sausage cut in 1/2 inch pieces. Add 1/2 cup chopped onion and 2 cloves garlic minced. Saute until onion is tender but not brown. Drain fat. Blend in:

28 oz. jar of Ragu sauce
1 tbsp. basil
1 tbsp. fresh or dried parsley
1/4 tsp. pepper

Bring to boil, reduce heat and simmer 10 minutes. Add 1/4 cup creamy Parmesan salad dressing after sauce is simmered. Serve over the cooked and drained Rigatoni.





ITALIAN SAUSAGE STYLE SPAGHETTI

1 pkg. Italian sausage
1 onion
1 green pepper
1 lg. jar spaghetti sauce
1 box spaghetti noodles

Finely chop onions and peppers, and cut Italian sausage into cubes. Place onions, peppers, and sausage into skillet and cook on medium until onions and peppers are tender. Drain. Pour in spaghetti sauce and simmer until hot. Boil noodles according to directions on box. Pour sauce onto prepared noodles and enjoy




ITALIAN SWEET SAUSAGE BAKE

3 lb. Italian sausage, cut into bite size pieces
3 green bell peppers, quartered
3 white or red potatoes, quartered
2 yellow onions, quartered
1 tsp. basil
Salt to taste
Pepper to taste

Combine Italian sausage, bell peppers, potatoes, onions, basil, salt, and pepper. Place in uncovered roast pan and bake at 375 degrees about 60 minutes or until sausage is brown and potatoes are done. Stir frequently. Serves 6-8.



BOGLIOLATI (Italian Sausage Roll)

1 box hot roll mix
1 pkg. Italian sweet sausage
1 tbsp. olive oil
1 tbsp. parsley
1/2 tsp. garlic powder
1 tsp. Italian seasoning
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. onion salt or powder
2 tbsp. grating cheese
2 diced tomatoes

Mix dough as directed on box. Roll out bread dough as thin as you can. Spread oil over dough. Sprinkle parsley, Italian seasoning, garlic powder, salt, pepper, onion, salt or powder, grated cheese and tomatoes. Spread bits of raw sausage over dough.
Roll up dough so ingredients are inside, form a long roll. Slice 1 inch pieces. Take 1 in palm of hand, twist, put on greased cookie sheet. Bake at 325 degrees until light brown. Makes 15 rolls.




ITALIAN SAUSAGE AND PASTA

2 pkgs. Italian sausage
1 lb. ground beef
1 lb. linguini noodles
1 jar. Ragu spaghetti, sauce with mushrooms
1 lg. green bell pepper
1 med. onion
1 pkg. shredded Mozzarella cheese
1 sm. can Parmesan cheese
1 tsp. salt or to taste

Fry ground beef, onions and bell pepper until done, drain, and put in a bowl. In same pan, cook sausage in a cup of water until done. Take out of pan, take off the skin and cut into slices. Put the ground beef mixture and the sausages back into the pan and salt. Add the spaghetti sauce and simmer.
Meanwhile, cook the noodles as directed, drain. Mix the noodles and the sauce mixture together and pour into a baking dish. Put the Mozzarella cheese over the top of mixture, sprinkle some Parmesan cheese on top. Bake at 350 degrees in the oven for about 15-20 minutes or until the cheese is a light brown. Serve with Italian bread and a salad.
