When to use upper and lower heat for baking?!


Question: Use upper baking to brown the top of an item, or to "grill" in some cases. It is a substitute in recipes for a grill often. Good for finishing pizzas and getting that cheese melty melty or searing a fishy, making grilled cheese, or finishing a chicken/turkey to brown the skin.
bottom is for baking - cakes, roasts, cookies and most items. Lower heat to braise a tough cut of meat or high heat for quick searing, and to aid in rising of bread or cakes. If you can turn the top and bottom burners on at once it is best for baking and gives nice even heat. Convectionis better....

i use upper+lower heat for baking layer cakes

The upper heat as you put it is the BROILER. and the lower heat is actual OVEN. Broilers are used for any application where HIGH HEAT is needed....Searing meats, Browning, etc. Say you bake a dish of lasagna in the OVEN (lower heat) and then you wanna get the top cheese all nice and brown..now you put on the BROILER...etc.
