Grilled chicken & pineapple or Hawaiian Chicken Pizza
1 pizza crust baked (425 for 7 to 9 min till brown)
1 teaspoon vegetable oil
1/2 pound (8 ounces) boneless, skinless chicken breasts cut into strips
1 clove garlic, chopped
1-1/2 teaspoons fresh ginger, chopped
1/3 cup BBQ sauce
1/2 cup pineapple chunks, halved
1/4 cup green onion, sliced
1 small red pepper, sliced thin and cut into half rings
3/4 - 1 cup mozzarella cheese, shredded
**1/3 cup macadamia nuts, halved optional
Preheat oven to 400°F. Heat oil in medium frying pan. Sauté chicken with garlic and ginger about 8 minutes or until chicken is no longer pink. Be careful not to brown garlic and ginger.
Brush baked crust with BBQ sauce and top pizza with cooked chicken, pineapple, green onion, red pepper and cheese. Bake 10-12 minutes or until heated through and cheese is melted and bubbly. During the last 5 minutes in oven, top pizza with macadamia nuts.
Chicken Fajita Pizza
1 Pizza Crust
1 tablespoon olive or vegetable oil
4 Boneless skinless chicken breasts (about 1 ? lb), cut into thin bite-size strips
1 to 2 teaspoons Chili powder
1/2 to 1 teaspoon Salt
1/2 teaspoon Garlic powder
1 cup Thinly sliced onions
1 cup Green or red bell pepper strips (2x1/4-inch)
1/2 cup Old El Paso? Thick 'n Chunky Salsa
2 cups Shredded Monterey Jack cheese (8 oz)
Heat oven to 425°F. Spray pizza pan &
Bake the crust 7 to 9 minutes or until very light golden brown.
Meanwhile, in 10-inch skillet, heat oil over medium-high heat. Add chicken; sprinkle with chili powder, salt and garlic powder. Cook and stir 3 to 5 minutes or until lightly browned. Add onions and bell pepper strips; cook and stir an additional 2 to 3 minutes or until chicken is no longer pink and vegetables are crisp-tender. Spoon chicken mixture evenly over crust. Spoon salsa over chicken; sprinkle with cheese
Thai chicken pizza:
Spread peanut sauce on pizza shell, top with chicken, cheese and red onion- bake and serve witrh crushed peanuts and cilantro...bean sprouts....maybe shrimp instead of chicken?

CHICKEN FAJITA PIZZA
2 whole chicken breasts, skinned, boned, cut into 2 x 1/2 inch strips
1 tbsp. olive oil
1 to 2 tsp. chili powder
1/2 to 1 tsp. salt
1/2 tsp. garlic powder
1 c. thinly sliced onions
1 c. green or red bell pepper strips
1 can (10 oz.) refrigerated pizza crust
1/2 c. prepared mild salsa or picante sauce
8 oz. (2 c.) shredded Monterey Jack cheese
In large skillet over medium-high heat, stir fry chicken in oil for 5 minutes or until lightly browned. Stir in chili powder, salt and garlic powder. Add onions and green pepper. Stir fry an additional minute until vegetables are crisp-tender.
Heat oven to 425 degrees. Grease 12 inch pizza pan or 13 x 9 inch. Unroll dough and place in greased pan, starting at center, press out with hands. Bake at 425 degrees for 6 or 8 minutes or until very light golden brown. Spoon chicken mixture over partially baked crust. Spoon salsa over chicken, sprinkle with cheese. Bake 14 to 18 minutes until golden brown.

MEXICAN CHICKEN PIZZA WITH CORNMEAL
CRUST
1 1/2 cups all-purpose flour
1 tablespoon sugar
1 1/4 teaspoons active dry yeast
1/4 teaspoon coarse salt (kosher or sea salt)
3/4 cup warm water
1 tablespoon olive oil
1/3 cup yellow cornmeal
Additional cornmeal
2 cups Mexican cheese blend (8 oz)
1 1/2 cups shredded cooked chicken
1 can (14.5 oz) Muir Glen? organic fire roasted diced tomatoes or plain diced tomatoes, drained
1/2 medium yellow bell pepper, chopped (1/2 cup)
1/4 cup sliced green onions (4 medium)
1/4 cup chopped fresh cilantro
Heat oven to 450°F.
In medium bowl, stir together 3/4 cup of the flour, the sugar, yeast and salt. Stir in warm water and oil. Beat with electric mixer on low speed 30 seconds. Beat on high speed 1 minute. Stir in 1/3 cup cornmeal and remaining 3/4 cup flour to make a soft dough. On lightly floured surface, knead dough until smooth and elastic, about 5 minutes. Cover and let rest 10 minutes.
Spray large cookie sheet with cooking spray; sprinkle with additional cornmeal. Press dough into 14x10-inch rectangle on cookie sheet; prick with fork. Bake 8 to 10 minutes or until edges just begin to turn brown. Sprinkle with 1 cup of the cheese blend. Top with chicken, tomatoes and bell pepper. Sprinkle with remaining 1 cup cheese. Bake 6 to 8 minutes longer or until cheese is melted and edges are golden brown. Sprinkle with green onions and cilantro.

I start with a freshly cooked pizza shell layered with mozzarella cheese, then layer olive oil, basil, garlic, salt, black pepper, chopped spinach, sliced, marinated chicken breast (in balsamic vinaigrette), artichoke hearts, roasted red peppers, diced roma tomatoes, red onions and portabello mushrooms. That's my favorite Chicken Pizza!
Satay chicken pizza.
Dice 2 chicken thigh fillets, add diced onion, fry in a pan till brown, add some ready made satay sauce to pan till bubbling.
Using a ready made pizza base, tomato pizza base sauce or tomato paste, add cooked chicken mixture, pineapple pieces and cheese and bake till brown.
Yummy. My very fussy daughter loves these.
Chicken Alfredo Pizza
12 inch prebaked pizza crust
1 jar Ragu Al fredo pasta sauce
2 boneless skinless chicken breasts, cooked and shredded
1 can sliced mushrooms (optional)
1 /2 an onion, sliced thinly (optional)
1 /2 a green pepper, sliced thinly (optional)
? cup each mozzarella and fontina cheeses
Spoon sauce onto pizza crust. Top with chicken, mushrooms, onion, and green pepper. Top with cheeses and bake at 350 for 12 minutes or until cheeses are bubbly .
BARBECUE CHICKEN PIZZA
1 bottle favorite barbecue sauce
3 boneless skinless chicken breasts, grilled and shredded
1/2 onion, sliced thinly
1 green pepper, diced or thinly sliced
1 1/2 cups shredded mozzarella cheese
1 prebaked or prepared pizza crust
Heat oven to 350 Degrees. Mix barbecue sauce and chicken, spread over crust. Saute onions and and peppers. Place on top of pizza, spread with mozarella. Bake for 30 minutes or until all is heated through and cheese is melted and bubbly.
