How about hot chocolate with marshmallows or pizza pops that you can just pop in the microwave.

S'mores. All you need are graham crackers, Hersheys chocolate bars and marshmallows.

I'm with the quesadillas, sort of. Butter the flour tortilla, cover with a layer of Mexican flavored shredded cheese. Heat in the microwave. Roll and eat. For a more substantial snack open a can of chunk chicken or tuna or such and add a layer. You can use sour cream instead of or in addition to the butter. They are better fried of coarse but after a long day and late at night I hate having to pull out the frying pan and all that.

oatmeal is a good one :]
