Irene's Christmas Cheese Dip (from Allrecipes.com)
2 pounds processed cheese food (eg. Velveeta)
2 onions, diced
3 tomatoes, chopped
6 jalapeno peppers, seeded and minced
1 red bell pepper, diced
1/2 green bell pepper, diced
DIRECTIONS
1. Melt the cheese in the top of a double-boiler over medium heat.
2. Add the onions, tomatoes, jalapenos, red and green bell peppers.
3. Mix well and heat for additional 10 minutes.
Melt the cheese in the micro. and add a jar of salsa. Spicy and very good.
GREEN CHILI CHEESE LOG
1 lb. Velveeta cheese
1 (8 oz) pkg softened cream cheese
1 (7 oz) can whole green chilis, seeded and washed
1 (4-1/2 oz) can chopped black olives
chili powder
Allow Velveeta cheese to stand until room temp; roll out between wax paper until it's 1/4" thick. Beat the cream cheese with some chili powder and spread it on the Velveeta. Place green chilis on top of cheese and sprinkle with olives. Roll from end to end (jellyroll fashion). Chill. Serve with crackers. (If you want it hotter, don't wash the chilis)
Dice up your velveeta, and add an equal amount of picante sauce or salsa. If you want it sppicy, use a hot variety. Nuke until velveeeta is melted and dip is creamy, whisking every 30 seconds or so. To make it heartier, add seasoned taco ground beef to the dip, or even a can of Wolf chili.
You can also do this on the stove-top.
EASY SPICY CHEESE DIP
In a bowl, combine 1 small loaf Velveeta (cubed) with 1 package taco seasoning mix and 1 can Rotel chilies and tomatoes. Cover and micro-cook 2 minutes on HI, stir; continue cooking one minute at a time until melted; stir well. Serve with tortilla chips or thick potato chips.
Also, today I made a different version of this substituting a can of Hormel chili for the Rotel tomatoes and deleted the taco seasoning. Add a tablespoon of diced pickled jalapenos or, if you don't have any on hand, a teaspoon of Tabasco sauce. Cook as directed above.
Melt how much cheese you are going to use with some milk in the microwave. Cut up some jalapenos, onion and tomatoes. Add some garlic powder and pepper. Mix well. You can also do this in your microwave then transfer to a crock pot to keep hot for parties.
I say use fresh ingredients because it will taste better then any thing in a jar. Personal opinion only!
I use a can of hot Rotel (drained) mix it with 1 chopped onion, saute in butter til clear, then add 1can cream of mushroom soup and Velveeta Cheese (1lb.) or cheese you like most. Just warm until all is dissolved,if you want it thick leave as is or add milk to it until its the desired thickness you want. Very easy to make, and taste sooo good enjoy. San
What my family does is cut the cheese into cubes and add rotel. Use 1 can for half a block of cheese or 2 for the whole block. Its fast, easy, and good. The kids make it all the time.
ooo i make my own cheese dip
I use velveeta, chili in the can with beans or without (your preference) i make it without n to make it spicy I cut up very small cherry peppers in lil bits n mix in the dip n u get tostitoes to use for dipping n u microwave the everything mixed together stirring occasionally .
This is my hubby's creation and it's highly addictive.
1/3 pound Velveeta, cubed
3/4 of a bottle of Taco Bell hot sauce
1 can Rosarita spicy refried beans
1 can diced green chiles
Nuke all that together while stirring occasionally. When it's done, float the remaining 1/4 bottle of hot sauce on top. I swear, you won't be able to stop eating it!
