Greek Chicken Pita roll:

Chicken breast: 2
Garlic - 4 cloves finely chopped
Thyme- 1tsp finely chopped
Oregomn - 1 tsp
Lemon juice: 1 leon
Lemon zest of half lemon
Cayenne, salt n pepper - as per taste

vegetable:
lettuce, tomatoe, green onion,cucumber

feta n hummus

mariante chicken in all teh above ingrediants for 3 hrs....

Hot a hot pan iwth soem olive oil....cook on both sides with a lid on top.

Let it cool...in meantime prepare some lettuce leaves, cucumber, spring onion, tomatoe

Hummus (readymade or homemade)

Slice teh cooled chcken....take pita bread...(warm it in microwave for 20 secs) ...spread humamr on it...put sliced chicken breats...top with vegetables n feta...roll n eat.

SWEET AND SPICY SNACK MIX

SERVES 12
Ingredients
2 cans (15 ounces each) garbanzos, rinsed, drained and patted dry
2 cups Wheat Chex cereal
1 cup dried pineapple chunks
1 cup raisins
2 tablespoons honey
2 tablespoons reduced-sodium Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon chili powder

Directions
Preheat the oven to 350 F. Lightly coat a 15 1/2-inch-by-10 1/2-inch baking sheet with butter-flavored cooking spray.

Generously spray a heavy skillet with butter-flavored cooking spray. Add garbanzos to the skillet and cook over medium heat, stirring frequently until the beans begin to brown, about 10 minutes.

Transfer garbanzos to the prepared baking sheet. Spray the beans lightly with cooking spray. Bake, stirring frequently, until the beans are crisp, about 20 minutes.

Lightly coat a roasting pan with butter-flavored cooking spray. Measure the cereal, pineapple and raisins into the pan. Add roasted garbanzos. Stir to mix evenly.

In a large glass measuring cup combine honey, Worcestershire sauce and spices. Stir to mix evenly. Pour the mixture over the snack mix and toss gently. Spray mixture again with cooking spray. Bake for about 10 to 15 minutes, stirring occasionally to keep the mixture from burning. Remove from oven and let cool. Store in an airtight container.

For snacking I love steamed edamame (soy beans in their pod - just steam and then suck out the tender soy beans!)
For a quick and healthy dinner, this is my favorite pasta dish - you can do this with whole wheat pasta, too!

Linguine with Fresh Tomato Sauce

2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish

In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour.
In large pot, bring 5 quarts of salted water to a boil. Add linguine and stir to prevent sticking. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally. Drain pasta well. Serve with tomato sauce, and garnish with fresh parsley.

Zesty Potato Skins
Serves 8
6 medium red potatoes, baked (about 1 1/4 pounds)
Vegetable oil spray
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon pepper
1 cup nonfat or low-fat cottage cheese, undrained (8 oz.)
1/2 teaspoon grated lime rind
1-1/2 tablespoons fresh lime juice
1 teaspoon dried chives
1/4 teaspoon chili powder
24 slices black olives (4 large)

1. Preheat oven to 450 degrees.
2. Cut each potato in half. Scoop out the center, leaving about 1/4 inch of potato on the inside of each skin. Cut skins into quarters.
3. Lightly spray insides of skins with vegetable oil spray.
4. In a small bowl, combine garlic powder, 1/2 teaspoon chili powder, cumin, and pepper. Sprinkle mixture evenly on insides of potatoes.
5. Place skins, skin side down, on a baking sheet. Bake for 15 to 20 minutes, or until lightly browned.
6. Meanwhile, combine remaining ingredients except olives in a blender or food processor. Process until smooth.
7. Spoon about 1 teaspoon of the cottage cheese mixture on top of each potato skin and top with a slice of olive.


Apple-Carrot Stir-Fry
Serves 4
1 tbsp. cooking oil
2 medium carrots, thinly sliced (1 cup)
1 medium onion, cut into wedges and halved crosswise
3 medium cooking apples, peeled, cored and sliced (3 cups)
1 tbsp sugar
1/4 tsp salt
2 tbsp water
1/8 tsp ground nutmeg

1. Pour cooking oil into a wok or large skillet. (Add more oil as necessary during cooking.) Preheat over medium-high heat.
2. Stir-fry carrots in hot oil for 2 minutes.
3. Add onion; stir-fry for 2 to 3 minutes or until crisp-tender.
4. Remove vegetables from the wok. Add apples to the hot wok; stir-fry for 2 minutes.
5. Sprinkle with sugar and salt. Carefully add water.
6. Cover and cook over medium heat for 3 minutes or until apples are just tender.
7. Return cooked vegetables to the wok. Cook and stir until heated through.
8. Sprinkle with nutmeg, if desired. Serve immediately.

Lemon-Oregano Chicken

INGREDIENTS
3 lemons
1/4 cup(s) loosely packed fresh oregano leaves, chopped
1/4 cup(s) loosely packed fresh parsley leaves, chopped
1 tablespoon(s) olive oil
Salt and ground black pepper
1 (about 3 1/2 pounds) chicken, cut into 8 pieces and skin removed from all but wings
DIRECTIONS
Preheat oven to 450 degrees F. Line jelly-roll pan with nonstick foil. From 2 lemons, grate 1 tablespoon peel and squeeze 3 tablespoons juice. Cut lemon into wedges; set aside.
In large bowl, combine lemon peel and juice, oregano, parsley, olive oil, 1 teaspoon salt, and 1/4 teaspoon pepper. Add chicken pieces; toss to coat. Arrange chicken pieces in prepared pan.
Roast chicken, without turning, 30 to 35 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife. Transfer to warm platter. Serve with lemon wedges to squeeze over chicken.
