YEast? Really. That sounds pretty good to me. There is really no perfect recipe for muffins. My sisters a cook and she's never really heard of yeast in a muffin. I have a friend named Ashley who makes these blubbery muffins that are so good! She calls them, "Emo muffisn."

Here is a recipe that I like to use. Try it out! Hope I helped.

Banana Muffins

1 1/4 cups mashed ripe banana's
3 tablespoons begetable oil
1 lage eg
1/3 cup suger
2 cups baking mix
1/2 cup raisins of chopped nuts, if desired.

Hope that's good. There really yummy. Sorry I don't know the conversions, but I'm sure there is a website on the internet to converge it for you.

Hm the perfect muffin? I don't think there is such a thing, lol. I do however feel there are things you can do to make your muffin come out well.

For example: DO NOT OVER BAKE! That will completely ruin the muffin. Don't miss out any key ingredients such as baking soda. Substitutions for oil such as applesauce make the muffins extra moist.

Just follow the directions on the box if you have it. Or what you can do is google how to make muffins correctly. But usually following the directions step by step works out just fine.

The Ultimate Chocolate Brownie Muffin!
40 min | 15 min prep | SERVES 12

Ingredients
3/4 cup good quality baking cocoa
1 teaspoon baking powder (heaping)
3/4 cup butter or margarine, melted
1/2 cup boiling water
1 tablespoon vanilla
1 1/4 cups sugar (or to taste)
2 egg
1 1/3 cups all-purpose flour
1/4 teaspoon salt
1/2 cup mini chocolate chip (optional)
1/2 cup walnut (optional)

Directions
1Set oven to 350°F.
2Line 12 muffin tins with paper liners.
3In a medium bowl combine cocoa and baking powder; mix to combine.
4Add in boiling water; mix well with a wooden spoon to combine.
5Add in the melted butter and vanilla; mix well.
6Add in the sugar, mix well with a wooden spoon.
7Stir in eggs with a wooden spoon; mix until combined.
8Mix the flour with salt; add in the the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
9Add/mix in mini chocolate chips or walnuts (or 1 cup of both!).
10Using an ice cream scoop fill each of the muffin tins almost to the top.
11Bake for 25-30 minutes or until muffins are done, don't over bake! (might take a little longer, depending on how full the muffin tins are with the batter).
12Cool, drizzle glaze over or frost with buttercream frosting.
