How would you make a chili marinate sauce (Medium hot)?!
I live in Britain so it would be good if i could use ingredients avalible in Britain.

Answers: I was watching a cooking program the other day ,It was a old Keith floyd program, he made a Chili sauce then dipped the Chicken slices in the sauce and fried them, I think it was Mexican sauce, it was red and looked great, do you have a similar recipe or one of your own special sauces Chili or other?.

Haven't seen the show but here is something I can recommend.
4 long red chillies (the most common in supermarkets, they are medium hot)
juice of 1 lime
2 cloves garlic
1/2 teaspoon whole cumin seeds
3 tbsp sunflower oil
Chop everything up roughly including the seeds inside the chillies and combine in a blitzer.
Pour over the oil and whizz to a sauce.
if it's too thick add a little water.
This will work as a marinade for chicken or you could fold it through some thick greek yoghurt to brush over grilling fish.

I saw it too. Just use the jar of sweet chillie sauce and add a touch of tobasco or similar hot sauce for the coating/marinade. So easy - 2 mins to prepare. Even use Reggae Reggae sauce!!
medium can of tomato frito or 3 tablespoons of tomato puree 2 tablespoons of virgin oil or veg oil then add 2/3 teaspoons of crushed dried chillies. Either marinade for 1 hour or paste the chicken and bbq, or stir fry. If you havent dipped the chicken in it you can put remainder in a tight sealed container and use another day.
sweet chilli
5 Thai Chillies chopped very small
500 ml maple syrup
3 Tbsp cider vinegar
4 Tbsp sherry
4 Tbsp light soy sauce
2 tsp minced ginger
3 cloves garlic, crushed
1/4 tsp pepper
1/4 tsp paprika
Preparation:
Mix together chillies, maple syrup, vinegar, sherry, soy sauce, ginger, garlic, pepper and paprika.
Simmer ingredients in a saucepan, stirring frequently over low heat until thickened (about 30 minutes).
