Spicy Sauteed Frog Legs Recipe

Prep:20m Cook:15m Servings:6

* 2 pounds frog legs
* 2 tablespoons olive oil
* 2 tablespoons unsalted butter
* 1 shallot, minced
* 2 cloves garlic, minced
* 1 tomato, chopped
* 1 cup chicken stock
* 1/2 teaspoon paprika
* 3 tablespoons flour
* 2 tablespoons parsley (optional)
* salt and pepper

Directions

1. Heat olive oil over medium heat. Add frog legs, sprinkle with salt and pepper. Sauté each side about 5 minutes or until golden brown.
2. (Note: Don't have heat too high or it will splatter all over.) May cover while browning.
3. Remove legs, set aside on a platter.
4. Clean skillet. Put in oil and butter, add shallots and garlic, sauté until tender. Sprinkle with flour.
5. Stirring, slowly whisk in chicken stock. Keep whisking as it thickens, turn down heat to low.
6. Add Old Bay Seasoning, tomatoes, parsley and paprika, salt and pepper to taste.

Frog with Thai chile paste & bamboo, "Namprik Kob"

Ingredients

1 frog, cleaned and head removed
7 cloves garlic, sliced
3 shallots or purple onions, sliced
1 teaspoon Thai chile powder
3 tablespoons fish sauce
1 teaspoon lime juice
1.5 cups sour sliced bamboo

Method

Wash the bamboo then cook it in boiling water for 10-12 minutes. Drain and set aside. Wash frog and put into boiling water until the meat is cooked through, about 5 minutes dedending on the size of the frog. Remove from boiling water, then pull the meat off of the bones.

In a wok, fry garlic and shallots until fragrant. Put the garlic, shallots and frog meat in a mortar and pestle and gently (no vigorous) pound them together until the frog meat is separated. Add a few frog bones to toss together and leave in as a visual garnish. Add bamboo and mix well using the pestle as more of a large stir stick. Add with fish sauce, lime juice and chile powder, adjusting quantities to suit your taste. Serve with steamed jasmine rice and vegetables of your choice and fresh Thai chile peppers.
