My husband and I love our Salsa Chicken Recipe. So easy to make, just throw the ingredients in the crockpot and let it cook and it makes so much, there is always leftovers!

Salsa Chicken:

4 chicken breasts
1 can rinsed black beans
1 bag frozen corn
1 jar salsa

Mix all together in crockpot and cook 8-9 hours on low. Shred chicken w/ 2 forks, but really as soon as you pick it up or mix it, it just falls apart and shreds apart itself. You can eat it in tortillas with shredded cheese on top or over rice.

my prize dish is my goats milk stew. it is absolutely TO DIE FOR! it is realtively easy to prepare, but the taste is so complex that youd think i sepnt hours slaving in the kitchen to make it. i start by boiling 8 cups of fresh goats milk. then, i add in some goats cheese--about 2 cups, and some parsely to taste. sometimes, i add chicken, but if you sop it up with a big biscuit, you dont need the meat--its just deflects attention from the savory taste of the warm goats milk. every time i eat this meal, it reminds me of growing up on a gat dairy and it takes me home----thanks for bringing back so many goat-tastic memories!
