Easy tasty recipes needed?!


Question: I am not a great cook but am getting quite into cooking recently. I would like some easy tasty recipes suggestions that are quick to cook as well. I enjoy all foods especially fish, meats and soups.

first tip get a slow cooker/ crockpot... it can make a ok cook into a great cook

French Onion Soup (Crock Pot)


4 Large Yellow onions -- thinly sliced
1/4 Cup Butter
3 Cups Rich beef stock

1 Teaspoon Worcestershire sauce
1 Clove Garlic -- minced
6 Slices French bread -- buttered
1/4 Cup Romano or Parmesan cheese

Using a large frying pan, slowly saute the onions in butter until limp
and glazed. Transfer to crock pot. Add beef stock, Worcestershire and garlic. Cover. Cook on low (200F) 6 to 8
hours. Place french bread on a baking sheet. Sprinkle with cheese.
Place under preheated broiler until lightly toasted. To serve, ladle
soup into bowl. Float a slice of toasted french bread on top.

hamburger casserole

boil box of pasta

in a skillet brown a pound of hamburger
cut up one onion and one green pepper add to the browning

drain the grease

add the pasta and skillet mixture together

add 32 oz can of tomato sauce

is casserole dish

add layer of mixture
then cut velvetta to completely cover layer
repeat
until cheese on top

bake in over 375 until brown on top like you like it usually no more then 30 minutes

this is a hit serve with salad and a good bread,,, have made this dish for over 29 years

Here's an easy one with chicken:


Bruschetta (Broo-sche-tah) Chicken:

1 can (14-1/2 oz.) diced tomatoes, undrained 1 pkg.
(6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces, seasoned generously with salt and pepper
1 tsp. dried basil leaves
1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese

PREHEAT oven to 400°F. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.

PLACE chicken in 13x9-inch baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.

BAKE 30 min. or until chicken is cooked through

.Top Ramen, everyone knows how to cook that. Yo, Top Ramen with veggies and pre cooked meat. You could put just about anything in it. Along with soy, cheese, to make it like with swiss...and I ton more. It's fun and really easy, just don't add too much water.

Moms Sweet & Sour Meatloaf

Sauce:
2 small cans tomato sauce
1/4 cup worchestershire sauce
1/2 onion chopped
1 tablespoon dried parsley
1/2 cup brown sugar

Mix all sauce ingredients together in bowl, set aside.

Ingredients (Meatloaf):
2 pounds ground beef
1/2 chopped onion
1 egg, beaten
1/2 cup or more if needed, quick oatmeal (not instant)
1 teaspoon garlic salt

In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.

Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.


Minestrone Soup

Ingredients:

1 lb hamburger
1 c chopped onion
1 t minced garlic
1/4 tsp Pepper
1 can beef broth
2 cans water
3 tsp beef soup base (heaping)
1 1/2 tsp Italian seasoning OR
1/2 tsp EACH fresh oregano, basil, sage, rosemary, and thyme.
16 oz Can whole tomatoes, broken into bite sized pieces
8 oz can kidney beans, un-drained
1 1/2 c sliced carrots
1 c frozen green beans or 2 zucchini, chopped
1 c frozen lima beans or corn
1 can of garbanzo beans (chick peas)

Brown hamburger, onion, garlic and pepper. Add rest of ingredients except macaroni. Cook for at least 20 min add macaroni and cook until macaroni is done.


Spicy Cajun Grilled Shrimp, Fish, Pork, or Chicken

1/3 cup soy sauce or Kikoman Teriyaki Marinade
? cup virgin olive oil
1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it
? cup sesame oil
? cup fresh lemon juice
2 tbs fresh ginger
2 tsp dry mustard
2 tsp tabasco
32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)
Bamboo skewers (1 for about 5 shrimp)

Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.

This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs.

take some nice cod fish fillets, rinse them off, pat dry..
Please in a peice of tin foil, coat with butter, or spray of your choice, season with season salt and pepper, a lemon wedge and sliced onion, seal up the tin foil and back at 350, for like 2-30 min, keep checking so it doesn't cook too long and turn in to rubber!! very good on the grill also (same way).

Tilapia or any white fillet, flour, seasoning, capers
1)Rinse and pat fish fillets dry
2)Mix 3 tablespoons flour for each fillet with Cavanders Greek Seasoning, or salt, pepper, Cayenne, garlic, onion powder.
3)Pat flour mixture onto fish, coat well
4)Heat skillet with enough Olive Oil and butter to cover bottom
5)When skillet it hot add fish, turn down heat and cook approx. 3 min or until lightly browned (don't mess with it while its cooking or it will lose its coating), turn over gently and cook an add'l 2 min. Remove fish to plate
6)Add 1 teaspoon of Capers per fillet to the pan and an additional 2 tablespoons butter, melt and pour over fillets
I serve with flavored Rice and a veg.

Cheddar-Macaroni Salad

Ingredients
1 cup elbow macaroni
3/4 cup cheddar cheese, cubed
1 stalk celery, sliced
1/2 small green bell pepper, chopped
1/2 cup frozen peas, thawed
1/3 cup onion, chopped
1/4 cup mayonnaise or salad dressing
1/4 cup sour cream
2 tablespoons milk
2 tablespoons sweet pickle relish

Directions
1- Cook macaroni according to package directions. Drain macaroni and rinse with cold water.
2- Drain again.
3- In a mixing bowl, combine cooked macaroni, cheese, celery, green bell pepper, peas, and onion. Stir gently to combine.
4- For dressing: Mix mayonnaise or salad dressing, sour cream, milk, pickle relish, and 1/4 teaspoon salt. Toss dressing with macaroni mixture.
5- Cover and chill for 4 to 24 hours. If necessary, stir in a small amount of additional milk.
