How can i change up eggplant parmesean?!
Answers: add some slices of tofu. it puts in a new flavor and adds new texture. its very good.
Try feta cheese in place of the parmesean.
A few things you can do would be based on changing up the breading. I would try to put in lemon pepper or dried garlic to start. Another way might be to grill the eggplant then bread it and give it a quick dunk in a deep fryer to make a crispy crust. Also try other cheeses on top like fontina, swiss, or brie.
I've made it with chedder cheese & Taco sauce, another way I make it is with ricotta cheese, parmesan, & mozzerella cheese, then add the tomato sauce.
Unless you're going vegan, try pounding out chicken breasts and grilling them, layer that into the eggplant and cheeses or you can add in more veggies, like broccoli or cauliflower, zucchini, etc. Get creative! Enjoy.

Eggplant Parm. is a dish that is made with Parmesan cheese and tomato sauce... What I would do is make a white sauce adding white cheddar, and Romano cheese (its a lot smoother then Parm.) Flour your eggplant salt & pepper and saute with olive oil until soft with a brown crust...
Remove and blot with a towel... Plate and add sauce...
Top with chopped fresh Basil, a meal fit for a King...
I do mine without breading and frying it - I hate the added fat - plus I use whole, sliced mozzarella, and I can't believe how many of my friends love it this way! Just slice your eggplant in 1 inch slices and pop under the broiler on a baking sheet. Broil until just barely browned, flip and do the same for the other side. Lay a bit of sauce in a baking dish, & then put a single layer of eggplant slices. Add a slice of fresh mozzarella atop each eggplant slice, then top with a bit more sauce - continue on, stacking these layers for 2-3 layers. Top with a bit more sauce, sprinkle on some mozzeralla and parmesan and bake at 350 for about a half hour or until the cheese is bubbly and just starting to brown. You now have a fancier and lower fat version that is really, really yummy!
