Question: My husband likes salmon, I don't, so I baught him salmon and me Mahi Mahi, I need a recipe that I can cook them both the same way and that is pretty easy, I would prefer to use my outdoor gas grill but I am also open to other options. thanks

I like to marinate salmon in italian dressing for an hour then grill. serve with grilled veggies and you have a nice healthy meal.

take both fish with butter and white wine and lemon pepper wrap in foil and place on top shelf of grill for 30 minutes it should be cook by then unwrap and serve

you can cook either of these indoor or outdoors


salmon with beer, butter, maple syrup, brown sugar and onions..sounds weird but I tell you what it cooks down into a delicious mix of flavor just put the salmon in a foil packet and add the above ingredients wrap it up and cook away

takes about 20-25 min to make each or less depending on the temperatures!

mahi mahi could be prepared the same way but I would take the butter, salt, pepper, fresh lemon and thyme with olive oil and packet those puppies up and dash some beer or wine over the top

INGREDIENTS
1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

DIRECTIONS
Season salmon fillets with lemon pepper, garlic powder, and salt.
In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
Preheat grill for medium heat.
Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Very simple and is absolutely delish. Now if you really want to impress your hubby wait until June/July when fresh copper river sockeye salmon becomes available. Copper river is the ultimate quality and is sure to satisfy. Take fillet of salmon and set on aluminum foil. add alittle salt and pepper to flesh, put sclices of butter and arrange on fillet as well as some thin slices of lemon. Keep it simple and let the quality of the fish do the work. Wrap aluminum foil around salmon and put in BBQ skin side on grill. Does not take long maybe 5 min depending on thickness of fillet. He will enjoy I promise

Not sure about the Mahi Mahi i've never cooked it myself but for the Salmon here's what I do.

Place in baking dish squeeze lemons or limes (I prefer lemons) all over fish (depending on size 1-2). Then sprinkle salt, garlic powder (or fresh crushed garlic), and place some fresh basil leaves on top.

Cook in oven till done. I guess you could let it marinade in this then stick on the grill.

I usually skip the crawfish and crabmeat topping ($$$), and just use the herbed butter to cook the fish. It's delicious!


Pappadeaux's Grilled Snapper Orleans

Butter Sauce:
1/2 lb. unsalted Butter
2 Tbsp. Lemon Juice
1 Tbsp. Chicken Bouillon
1/4 tsp. White Pepper
3 Tbsp. Onion, chopped fine
1 Tbsp. Garlic, chopped fine
1 tsp. Oregano
3 Tbsp. White Wine
Salt to taste

Spices for fish:
1 tsp. Paprika
1/4 tsp. White Pepper
1 tsp. Salt
1/4 tsp. Black Pepper
1/2 tsp. Oregano
1/2 tsp. Thyme
1 1/2 tsp. Cayenne Pepper
1/4 tsp. Garlic Powder

4 (8 - 10 oz) Snapper filets
1 lb. Crawfish Tail Meat
1/2 lb. Lump Crab Meat
1/2 C. melted unsalted Butter

To make the butter sauce, allow unsalted butter to soften to room temperature. Combine all other ingredients with butter and blend till smooth. Refrigerate until needed.

To make the spice mix, combine all spice ingredients and mix well. Place in a spice shaker.

Preheat oven. Melt 1/2 cup of unsalted butter and brush the belly side of each fillet evenly. Sprinkle spices on fish. Place fish on grill belly side down and repeat this step for the opposite side of fish. Grill each side approximately 3 to 4 minutes. While fish is cooking, melt half of the refrigerated butter sauce from the first step in a sauté pan. Add crawfish and crabmeat to sauté pan and stir occasionally until hot. Set aside. When the fish is ready, reheat the butter sauce and add additional butter sauce from the first step to make the sauce creamy. Serve sauce immediately over the fillets.

Sweet and Sour Fish

I like to use large Orange Ruffy fillets but any large fillet will work. (I don't like to use trout or salmon)

I dip the fillet whole in egg then drench it with ground up dry bread crumbs. Fry it at medium heat in a skillet until the breading is brown (the fish should be done by that time, don't fry it too hot or the breading will burn before the fish is done). When the fish is done place it in a baking dish and place cut up vegetables over the fish then pour hot sweet and sour sauce over the fish and vegetables and serve.

Raw Vegetables sliced in bite sized pieces:
carrots
onions
bell peppers
small tomatoes (I like to use roma's)

Sauce
? cup of soy sauce
1 cup of pineapple juice
1/4th cup vinegar (I like apple cider vinegar)
1Tbl spoon brown sugar
1/4th cup catsup
bring to a boil and thicken with ? cup of cold water and 1 or 2 tbl spoons of corn starch
You can always adjust to taste

This will be enough sauce for 2 large fillets.

blackened will work w/ both

This one is really good on anything. If you don't like too much spice reduce the amount of cajun seasoning, enjoy!


Spicy Cajun Grilled Shrimp, Fish, Pork, or Chicken

1/3 cup soy sauce or Kikoman Teriyaki Marinade
? cup virgin olive oil
1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it
? cup sesame oil
? cup fresh lemon juice
2 tbs fresh ginger
2 tsp dry mustard
2 tsp tabasco
32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)
Bamboo skewers (1 for about 5 shrimp)

Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.


This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs.
