How easy does salmon break?!


Question: I had salmon for dinner, and when I put it away in a freezer bag, it broke into pieces. I can never get them to be perfect squares, they always break apart.

That's what is supposed to happen to it after it's cooked, fish of that type naturally "flakes" when cooked properly, so you're doing that correctly......try this method....

Let the cooked salmon come to room temperature after you've finished dinner. Line a cookie sheet with foil or cling film (plastic wrap); With a large spatula, carefully move the cooked fish onto the cookie sheet, and GENTLY slide it onto the foil/plastic wrap. Place in the freezer for about 45 minutes, till firm. Remove the cookie sheet from the freezer and wrap in the foil/plastic wrap, then place into a pre-marked zip type bag (I like the ones with the zippers on them) and expel as much air as possible and return to the freezer. DEFROST OVERNIGHT IN THE REFRIGERATOR for best results....Enjoy!!

It DOES flake when it's done. I always put my leftovers in a little casserole dish, and cover that with saran (plastic wrap)...... It'd be hard for salmon to keep it's shape in a baggie:)

Because salmon has a flaky texture, cook them with the skin on. The skin is perfectly edible,and it will hold the cooked product together better. Also, you may also want to place it on a grease proof(parchment) paper first before placing it in a freezer bag.
Leave them as it is in the freezer bag when reheating them in a microwave or steamer. Pull out the grease proof paper together with the salmon on it from the bag when ready, Transfer on to plate in one piece!

Salmon will go flaky when they are cooked.
Flake the rest, and make some salmon cakes and freeze for another meal.
