What should I do with shrimp I cooked on saturday?!

You can do several things with them. You can peel them and put them in the freezer and they will keep for months. I will keep them in the freezer till we want to make gumbo or some other kind of seafood dish.
Make creole (go to www.foodnetwork.com)
Make a alfredo sauce and make shrimp fett.
It depends on how you cooked them... you can make shrimp salad, stir fry w/ veggies, toss with pasta and marinara sauce... or even eat them plain with a dipping sauce, like a shrimp cocktail.
Stir fry. Chop up some veggies, toss into a hot pan with a little oil to cook a little. Then add the shrimp (you can leave them whole, or cut them up a little) and some rice (preferably, some leftover rice from the fridge.) Add some water, soy sauce, ginger and garlic and stir until everything is soft and heated through. Drizzle with some stirred egg and mix once more to cook the egg. Voila. Shrimp and egg fried rice.
Saturday? Personally, I would say trash or disposal whatever works best for you. If I dont eat it the night of, its trash.. but I think 24 hours is the rule of thumb.
Shrimp and Grits:
Saute a minced onion and some minced garlic in a little butter for 5-7 minutes. Add enough flour to make a roux, and cook 2-3 minutes. Stir in a little white wine, some chicken stock, and a little half and half or cream. Add the shrimp and simmer just long enough to reheat the shrimp, about 5 minutes. Make some grits (quick cook are fine, but NOT instant!) using chicken stock and cream or milk instead of water. When the grits are cooked (cook according to pkg directions), stir in a little butter, parm cheese, and salt, pepper, and garlic powder to taste. Top the grits with the shrimp "sauce". Easy and yummy!

Shrimp spoil quite quickly, and unless you froze it, I wouldn't try eating them.
This is an amazing recipe that I made for my family just last night; everyone loved it! I used raw shrimp, but since yours are already cooked, just add them to the saucepan at the end just to heat them back up.
Drizzle 2-3 julienned bell peppers (green, red, or yellow) with 2 tablespoons of olive oil on a baking sheet. Roast at 425 degrees for 20-30 minutes tossing 1-2 times during. Cook about 16 oz of whole sweet sausages thoroughly. Let cool slightly and then slice into 1/4 inch slices. Saute 2-3 cloves of garlic and 2 green onions (both minced) in 1 tablespoon of olive oil in a large saucepan. Add Italian seasoning, dried herbs, and pepper (all to taste) along with 1/4 cup fresh chopped or 1 tablespoon dried parsley, 1 chicken bouillon cube, and 1 cup of good white wine (pinot grigio worked very well). Once bouillon has dissolved, add sausage and roasted red peppers and stir to combine well. Once wine is reduced, add cooked shrimp. Serve over cooked linguini and enjoy!
We served this with a fresh salad and fresh foccacia bread. Delicious meal!
They need to go in the bin. I only hold cooked food over night then if I dont eat it the next day its in the bin. Shrimps are yum too what a shame.

Try this..... UK style "Potted Shrimps"
Peel mix with a little sea salt, cracked black pepper then loosely layer them in a ramekin, slowly clarify some butter skim pour
into molds place in fridge until set. When required turn out onto a bed of mixed leaf lemon salad serve with boiled new potatoes.
