I boil my chicken and put it in the food processor to chop it up thin. Then I mix in Miracle whip, celery, sweet relish and salt and pepper. Then let it chill.

I either use leftover baked chicken (chopped small) or canned white meat, like canned tuna. Combine in bowl with chopped celery, onion, salt, pepper and mayo. Also, sweet pickle relish can be added. Serve on lettuce or as a sandwich filler.

I either use left over baked chicken or boil chicken breasts. Then I dice them very small, season with salt and pepper. For about 1 1/2 to 2 cups diced chicken add;
1 ribs celery diced
1/2 Granny Smith Apple diced small
1 table spoon red onion diced very fine
Start with about 2 heaping tablespoon real Mayonnaise, mix if to dry add a teaspoon at a time. Add a handful of finely diced chopped walnuts if you want. Cover and let it chill at least 1 hour, check and see if more mayo and salt and pepper is needed. Chill and serve.
