I am looking for a berry cobler recipe where the the pastry is on the bottom of the berries.?!
Answers: Low fat and sugar would be great too!
1 stick butter
1 cup flour
1 cup milk
1 cup sugar
2 tsp. baking powder
dash of salt
3-4 cups fresh fruitor berries
Preheat oven to 350*
melt butter in a 9x9 baking dish. add all other ingredients except fruit. Stir well. Arrange fruit/berries on top of dough. Bake 40-55 min, or until lightly brown and fruit is tender. Serve warm with milk or ice cream

6 tablespoons unsalted butter or lard
1 1/2 cups fresh blueberries
1 1/2 cups fresh blackberries
1 cup fresh huckleberries, or raspberries
1 cup sugar
1 tablespoon cornstarch
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
2 tablespoons whiskey
1 recipe Sweet Biscuit Mix, recipe follows
3/4 cup water
Confectioners' sugar, for garnish
Sweetened Cream, for accompaniment
Preheat the grill to medium high, or an oven to 375 degrees F.
Place the butter or lard in a small, round cast iron Dutch or camp oven (5 to 6 quarts), or large cast iron skillet and place over the grill or in the oven to melt. Remove from the heat.
In a bowl, toss the fruit with the sugar, cornstarch, lemon juice and zest, and whiskey. Let sit for 20 to 30 minutes.
In a bowl, combine the Biscuit Mix with the water and mix until just combined. Pat out the dough into a large round and place in the bottom and up the sides of the pot or skillet. Spoon the fruit mixture over the dough and cover with any juices. Place on the grill, or in the oven and bake until the dough is golden brown and risen, and the fruit is bubbly, 30 to 40 minutes.
Remove from the oven and let cool for 15 minutes before serving. Sprinkle with confectioners' sugar and drizzle with sweetened cream, if desired.
Sweet Biscuit Mix:
2 cups all-purpose flour
1/2 cup sugar
1/4 cup plus 1 tablespoon powdered milk
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup vegetable shortening or lard
Combine all the ingredients except the shortening in a bowl. Cut in the shortening until the mixture resembles coarse cornmeal. Place in an airtight container and store in a cool place.

INGREDIENTS
1/2 cup butter
2 cups self-rising flour
2 cups white sugar
2 cups milk

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.
Drop blackberries into batter; if more crust is desired add less blackberries. Bake in preheated oven for one hour or until golden brown.
This is the recipe I use for pie crust (but honestly, Jiffy makes a pretty good crust in a box)
All you need to do is put the crust in the pan and put your filling in. Next, place another crust on top. This recipe is for a pie size, not a cobbler size. You might want to double it. If you have some left over, bake it on a cookie sheet til golden and sprinkle with sugar and cinnamon. YUM!
2 cups flour
1 cup cold crisco
1 tsp salt
1/4 cup ICE water
Mix salt, flour and some crisco to make a cornmeal texture. Cut in rest of crisco. sprinkle with water until a ball forms. Cool in fridge 1/2 hour. Roll out 1/4" thick and lay in your pan. Prick the crust with a fork all over. Add filling, add other crust on top and bake 350°F until crust is golden.
Be careful NOT to over-work your crust. It will become hard. Mix gently!
If the pastry is on the bottom, it is not a cobbler. A cobbler is topped with a sticky biscuit type dough that bakes on the top of the fruit. Sometimes this dough sinks into the fruit more than others, but it should still be on the top.
It sounds like you want something more along the lines of a tart, which is more like a shallow, open faced pie (usually no crust on the top.) See the link in Sources or search for other berry tart or tartlet recipes.
Instead of making your own pastry, you could also use packaged frozen puff pastry, refrigerated pie crust dough, or a pie crust mix.
