Got any good recipes for chicken (thighs) in the crock pot?!

4 thighs (or more if you want)
1 tsp.salt & 1/2 tsp.pepper
1/2 tsp. thyme if you have it, if not poultry seasoning
1 C. converted rice, or brown rice if you have it
1 lemon sliced thin
2 C. water
can cream of mushroon, celery or chicken soup
Salt and pepper and other seasoning on chicken. Put rice and water in crock pot, add the chicken, lay lemon slices on it and spoon the undiluted soup on top. Cover, cook on med. 3-4 hrours or on low all day while your at work.

6 chicken thighs (remove skin)
1 can Italian-style diced tomatoes (28 oz)
salt and pepper

Throw these in the crockpot and cook on high for about 3 hours. Serve with egg noodles. Can it be more simple?!

IF you don't love garlic, use regular tomatoes, but this had a wonderful garlic flavor, we thought. Even the kids liked it, and they usually won't eat anything with sauce. The "sauce" is VERY liquidy, so if you want a more gravy-ish sauce, add some tapioca at the beginning (I'm doing it that way next time), or partially drain the tomatoes before cooking.

4 boneless, skinless chicken thighs
4 chicken legs, skin removed
15 oz. can Italian tomato sauce
4 oz. jar sliced mushrooms, drained
1 onion, chopped
3 cloves garlic, minced
2 green bell peppers, chopped
1/3 cup water
2 Tbsp. flour
Preparation:
Cut chicken thighs and legs into 1" pieces. Combine with remaining ingredients except for water and flour in a 3 to 4-quart slow cooker and stir gently to combine. Cover crockpot and cook on low for 6-7 hours or until chicken is tender and thoroughly cooked.
In small bowl, mix together water and flour. Drizzle over chicken mixture in slow cooker and mix well. Increase heat to high, then cover crockpot again and cook for 10-15 minutes until liquid is thickened. Serve over hot cooked egg noodles. 4 servings

Country Captain Chicken
Take chicken thighs and add
2 cans stewed tomatoes with celery and onions
1 small can of black olives
1-2 tsps of Curry Powder

Cook until the chicken is tender and cooked through. Serve over rice and it is fantastic. Great for company or a quick dinner on the stove or in the crockpot.

chicken plus broth and veggies equals soup

buy a pkg of stroganoff seasoning and follow the directions on the packet using chicken instead of beef. Odd but really good.
