Does anyone have a good recipe for tripe?!

500 g (1 lb) ox tripe
500 ml (2 cups) vinegar
7 liters (28 cups) water
750 g (1? lb) ox hooves
2 tablespoons corn oil
2 chorizo sausages, sliced diagonally into 1-cm (?-in) pieces
60 ml (? cup) extra virgin olive oil
1 small onion, diced
3-4 cloves garlic, peeled and crushed
250 ml (1 cup) chopped tomatoes (fresh or canned)
375 ml (1? cups) canned tomato sauce
1 medium red capsicum, cut into 2?-cm (1-in) squares
85 g (2/3 cup pitted green olives
100 g (? cup) chickpeas
Salt and pepper
Tabasco sauce (optional)
>> Wash ox trip in vinegar thoroughly. Rinse and brush to remove any dirt. Boil trip in 2 liters (8 cups) of the water for 10 minutes. Drain and discard water.
>> Wash ox hooves well. Boil in 2 liters (8 cups) of the water for 10 minutes. Drain and discard water.
>> In a stockpot, combine ox trip and ox hooves. Pour in remaining 3 liters (12 cups) water and bring to the boil, then simmer for about 2 hours or until meats are tender. Remove meats from broth and let cool. Reserve 375 ml (1? cups) of the broth.
>> Meanwhile, heat corn oil in a frying-pan and fry the chorizo pieces until firm, about 2 to 3 minutes per side. Set aside.
>> Slice the trip into 2-cm (1-in) squares. Remove meat from the ox hooves and slice similarly. Set aside.
>> Heat olive oil in a casserole and sauté until fragrant. Add the sliced meats and sauté until lightly brown. Pour in tomatoes, canned tomato sauce and the reserved broth. Simmer for about 5 minutes.

find a bin, place tripe in bin.close the lid.
that is the best thing to do with tripe.

I don't think it's possible to have a good tripe recipe! They're all a load of tripe!
i have fried it w/ tongue in spicy seasonings , the tongue was cut into cubes , adding just enough water occassionally to keep from scorching + moisten meat . other than that menudo is the only thing i've had it w/ + i've never made menudo .
2 1/2 lb (1.1 kg) honeycomb tripe
1 pig's trotter, chopped into 6-8 pieces
2 3/4 cups (21 fl oz) 600 ml dry white wine
1/2 pt (280 ml) water
1 onion, peeled and sliced
2 tbsp olive_ oil 2 cloves
1/4 tsp ground allspice
1 tsp ground coriander seeds
4 cloves of garlic, peeled and sliced
3 or 4 pieces of sun-dried tomato, cut into strips) or 3 fresh ripe tomatoes, peeled, seeded and quartered
salt and pepper
to serve:
2 tbsp finely chopped parsley
grated zest of a lemon
method
1. Rinse the tripe, dry it well and cut it into squares.
2. put the pig's trotter in a small saucepan with the wine and water, bring to the boil and simmer gently for 3-4 hours.
3. When you drain the pig's trotter, keep the stock.
4. Then prepare the rest of the dish. In a heavy-based pan, fry the onion in the olive oil until golden brown, add the spices and fry them for 3-4 minutes.
5. Add the tripe and garlic to the pan and turn up the heat to evaporate all the moisture from the tripe.
6. Add the tomatoes, the pig's trotter and about 1/2 pt (280 ml) of the stock. Cover and simmer gently for 30-40 minutes, adding more liquid as necessary.
7. Transfer the tripe and pig's trotter to a serving dish. Reduce the liquid to a rich gravy. Season to taste and pour over the tripe.
Sprinkle with the parsley and lemon zest.
Baked Tripe
Cut tripe into good-sized pieces and spread over them the following stuffing: Mix together 4 tablespoons crumbs, 3 tablespoons vegetable shortening, 1/2 teaspoons salt, dust powdered mace, 1 tablespoon chopped cooked ham, 1 chopped onion, 1 tablespoon chopped parsley, 1/4 teaspoon pepper, dust paprika, and 1 well beaten egg.
Roll them up and fasten with wooden toothpicks.
Dredge with flour and spread on each 1 tablespoon vegetable shortening.
Bake in hot oven 30 minutes, basting frequently with melted vegetable shortening and hot water.
Garnish with lemon slices and pass melted butter.
Dont know what it is...if I did I could not cook it anyway. I am a terrible cook!

you can add 200g of meat+liver+lung+stomach
cook for an hour
Ha ha Last week I saw Gordon Ramsey stir fry it. Everyone said it was tasty but I am not 100% convinced. :)
