Meatballs and rice for 50 people?!


Question: I cannot decide what to make for this dinner I have to do tonight. I am thinking of doing meatballs and rice. My problem is I have to transport the meal somewhere where there is no place to heat it up, so the rice has to be cooked at home. How would I do that so it doesn't go starchy?

For Rice:-
Rice cookers are indeed wonderful, especially if you are making large quantities. Most of them also have "keep warm" settings that will keep the rice at a good temperature for four or six hours. This can be very convenient if you have a household of people with different schedules who want to eat at different times.

Preparing rice without a rice cooker

First u need
3 1/2 qt. white rice
7 qt. of hot water

The only thing you'll need is a small pot with a tightly fitting lid. Wash rice in the pot. When you're done, drain the rice again, then fill with water above 2 cm (nearly 1 inch) above the level of the rice.
Heat to boiling over medium heat. Keep boiling over this heat; you might need to reduce heat a bit if it threatens to spill over the top, but when that happens I usually just skim off the top with a metal spoon, which returns things to normal. After a few minutes, nearly all the water will be gone, and you'll actually be able to see "holes" in the rice. Immediately cover the pot and reduce heat to a minimum. Cook, keeping pot tightly closed, for 45-60minutes, then remove from heat and leave to stand (still tightly closed!) for another 10-20 minutes.
You might want to fluff up the rice a bit with a fork before serving.

IMPORTANT NOTE:DO NOT STIR THE RICE AT ANY POINT DURING THE PROCESS! STIRRING CAUSES THE STARCHES TO LEAVE THE RICE, LEAVING YOU WITH YUCKY RICE BROTH

Look, im a filipino okay. We eat rice three times a day, and so, we a re experts since birth. lol!

Anyway, the easiest is using a rice cooker. Like you just, get like 10 cups of rice (im very sure that this will not fit 50 people, it will only fit the rice cooker) and wash them for three times. Then, you place it in the rice cooker for exactly 30 minutes, more or less, it differs from what kind of rice cooker you use.

So, thats that. I'll recommend, spaghetti and these nice uhm...cheese, wrapped in ham and then fried in bread crumbs. Ahhh.....you can just cater to throw away the problem...lol!

I think it depends on how you cook your rice, I use Goya medium grain and use some olive oil when cooking it...it helps with keeping the rice from getting sticky and of course not too much water...but anyway...I cook the rice, transfer it to a big aluminum pan and double cover it with foil. Then I buy one of those big hot/cold bags you find in the supermarket and carry it in there...I drove about 1 hour with it and it was still hot. Make sure to fluff the rice as soon as you uncover it. Regarding the meatballs, if your using sauce with them, why not put some of the heated sauce in a tupperware and then pour over the meatballs when you get to your destination? Good Luck!

Rice kept warm carries loads of bacteria! They are very careful in old peoples homes for example, as it causes terrible upset stomach!
