Sounds wonderful! How about coleslaw, with some crushed pineapple in it? or steamed asparagus ... tropical fruit salad of pineapple chunks, mango, papaya & strawberries .... just white rice ..... Hagen Daz makes a really good Mango Sorbet, if you need something for dessert.....

Anyway! Fried rice, snow peas, or a nice curry soup.

Stir fry some veggies, maybe some rice. Depending on where you are the in season veggie steamed? Hope I helped

hmmm ... if it were me, i would make (jasmine) rice and some kind of green vegetable ... maybe steamed asparagus

regular white rice and steamed veggies. B/c the chicken is so flavorful you dont wanna overpower it with complex sides. keep it simple. I personally like cocunut rice as a side but that might be alot of coconut for your palate. be creative and have fun.

Try a nice Jasmine or Basmati Rice and a green salad. Enjoy.

I love rice mmmmm can never go wrong with rice. and maybe a scoop of ice cream for dessert with a splash of root beer. oh and how bout some corn on the cob?

Its a pretty tricky dish, its unique within its self just because poultry was never meant to be sweet, i'm think corn would go nice with it, creamed spanish, corn bread would go terrific as well, keep the sides sweet, or it'll make the main dish taste a little more tart then you would probley like.

If it's coconut CURRY chicken, lucky! That's my favorite recipe and so easy to make in a crockpot.

We always have it with Basmati or Jasmine rice (add Jasmine flowers and 1 tblsp jasmine tea boiled to the rice after it's cooked for a nice jasmine taste and aroma.) This is all that you need to serve. Unless you need a veggie then serve a side of roasted red peppers and green peppers, soft with some melted butter or splash of balsamic.

Yum can I come over for dinner as well!!! lol. I think since coconut chicken is a Tai dish I would suggest you either serve spring rolls or curry pufs as a side dish and rice to with the chicken I suggest plain rice as the coconut has so much flavour you don't want to overpower the rice with flavours.The curry puffs and spring rolls are both really easy to make. You can buy the spring roll pastry from your frozen section of the supermarket as for the curry puffs you need short crust pastry that you buy aslo and just fill them up with:

cook your potatos then chop them up in cubes add some oil to a hot pan add the potatos toss till a little golden then add curry powder, peas, and a little water to help it not stick, let it cool down then cut the pasty in quarters or round shape with a cookie cutter add the filling and press the sides put in an over tray spray with cooking oil spray on the tray as well as on the pastry then bake, easy. As for the spring rolls they usually have the receipe on the back of package. Then serve it with plum sauce or chillie sauce both can be bought from asian grocery shops, Enjoy.

-white steamed rice with butter.
-Garden salad.
-roasted potatos.

The coconut chicken goes best with these rice dishes-- try it~

ingredients

* 4 cup of rice
* 5 1/2 cup water
* 2 chicken cube paste
* 100 gram butter
* 2 red onion slice
* pandan leaf (omit if you don't have one)
* 1/2 cup raisin

Directions

1. first clean the rice.
2. melt the butter in a pot. then put the onion.
3. after onion already smell out, put the rice and stir well.
4. add water, pandan leaf, chicken cube and also raisin. stir well.
5. slow the fire and leave it until cook.

LUFFY BUTTERED RICE

1 c. chicken broth
1 c. uncooked long grain rice
1/2 tsp. sugar
1/2 tsp. salt
1/2 tsp. lemon juice
2-3 tbsp. butter, melted

Combine chicken broth and 1 1/4 cup water in large glass measuring cup. Cook in microwave on high for 4 minutes. Place rice in casserole dish and add the hot liquid, sugar, salt and lemon juice. Mix well and cover. Cook on high 18 minutes, stirring after 9 minutes. Place butter in a 1 cup liquid measuring cup. Melt in microwave, pour over rice and serve immediately.
