Choc mint slice
Serving size: Serves 10 or more
Cooking time: More than 1 hour
Special options: Kid friendly
Course: Cakes/baking

INGREDIENTS

90g unsalted butter, at room temperature
1/3 cup brown sugar
? cup self-raising flour, sifted
? cup desiccated coconut
2 tablespoons cocoa powder
2 tablespoons milk

Filling
2 cups icing sugar, sifted
30g butter, softened
2 tablespoons boiling water
4 drops peppermint essence

Chocolate topping
200g dark chocolate
1 teaspoon vegetable oil
2 Nestlé Peppermint Crisp chocolate bars, chopped

METHOD


1. Preheat oven to moderate, 180&degC. Lightly grease an 18 x 28cm slice pan. Line base and two long sides with baking paper, extending paper 2cm above pan edge.

2. In a small bowl, using an electric mixer, beat butter and sugar until light and fluffy. Blend in flour, coconut, cocoa and milk. Press mixture firmly into prepared pan. Bake for 12-15 minutes. Cool in pan.

3. Filling: in a large bowl, combine icing sugar, butter, water and peppermint essence. Beat with a wooden spoon until smooth. Spread filling over cooled base. Chill for 15 minutes, until firm.

4. Chocolate topping: melt chocolate and oil in a heatproof bowl over a saucepan of simmering water. Pour over cooled slice. Sprinkle Peppermint Crisp over top. Chill for 30 minutes.

5. Using a hot knife, cut slab into squares. Store chilled in an airtight container.

Mint. If you have some fresh mint a mojito is definitely called for.
